---Zucchini Bread Recipe
3 eggs
1 cup olive oil
2 cups sugar
2 teaspoons vanilla
2 cups coarsely grated zucchini
1 can (8oz) crushed pineapple, drained
3 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 1/2 teaspoon cinnamon
3/4 teaspoon nutmeg
1 cup chopped walnuts
1 cup raisins
1 Preheat oven to 350°F. In a mixer, beat eggs. Add oil, sugar, and vanilla; continue beating mixture until thick and foamy. With a spoon, stir in the zucchini and pineapple.
2 In a separate bowl, combine flour, baking soda, salt, baking powder, cinnamon, and nutmeg. A third at a time, add dry ingredients into wet and gently stir (by hand) after each addition. Add the walnuts and raisins, blend gently.
3 Divide the batter equally between 2 greased and flour-dusted 5 by 9 inch loaf pans. Bake for 1 hour or until a wooden pick inserted in to the center comes out clean. Cool in pans for 10 minutes. Turn out onto wire racks to cool thoroughly.
Makes 2 loaves.

I took a Chocolate Banana Cake recipe and modified it a number of years ago to use up some zucchini and it made an EXCELLENT recipe. The cake rises to about 4 inches high in a sheetcake pan and has a very nice flavor. Here it is:
CHOCOLATE ZUCCHINI CAKE
2 1/4 c flour
1 tsp baking powder
3/4 tsp baking soda
1 tsp salt
2/3 c butter
1 1/2 c sugar
2 eggs
2 oz melted chocolate
1 tsp vanilla
2 c shredded zucchini
1/2 c sour milk
Cream butter and sugar. Add eggs. Add chocolate. Stir in vanilla. Add dry ingredients, mixing alternately with zucchini and milk. Turn into a sprayed sheetcake pan and bake in a preheated 350º oven for 30-35 minutes or until it tests done with a toothpick.
Frost with your favorite frosting.

INGREDIENTS

2 c. shredded zucchini

Beat eggs until foamy. Stir in sugar, zucchini, oil and vanilla extract. Gradually add dry ingredients and spices. Stir in nuts. Pour into bread pans which have been greased only on the bottoms. Bake at 325 F. for 60-80 minutes. Cool 10 minutes. Remove from pans and cool completely before cutting.
ZUCCHINI BREAD
2-1/2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. grated orange peel
Pinch salt
Cinnamon to taste
Nutmeg to taste
1/2 c. egg substitute
1 c. sugar
2 tbsp. orange extract -- or Grand Marnier
1 tsp. vanilla
2 c. finely grated zucchini
1/2 c. chopped pecans
Preheat oven to 350 F. In a large bowl sift together dry ingredients. Add orange peel and set aside. In a smaller bowel beat together egg substitute, sugar, vanilla and Grand Marnier. Add liquids to dry ingredients and stir until well combined. Add zucchini and nuts and combine until fully incorporated. Pour into non-stick loaf pan or pan lightly sprayed with cooking spray and floured. Bake for 50-60 minutes or until toothpick inserted in center comes out clean.

Zucchini Bread
3 1/4 cups all-purpose flour
1 1/2 teaspoons salt
1 teaspoon ground nutmeg
2 teaspoons baking soda
1 teaspoon ground cinnamon
3 cups sugar
1 cup vegetable oil
4 eggs, beaten
1/3 cup water
2 cups grated zucchini
1 teaspoon lemon juice
1 cup chopped walnuts or pecans
Preheat oven to 350 degrees F.
In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar.
In a separate bowl, combine oil, eggs, water, zucchini and lemon juice.
Mix wet ingredients into dry, add nuts and fold in.
Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean.
Alternately, bake in 5 mini loaf pans for about 45 minutes.
Chocolate Zucchini Cake
2 1/2 cups regular all-purpose flour, unsifted
1/2 cup cocoa
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
3/4 cup soft butter
2 cups sugar
3 eggs
2 teaspoons vanilla
2 teaspoons grated orange peel
2 cups coarsely shredded zucchini
1/2 cup milk
1 cup chopped walnuts or pecans
Glaze (directions follow)
Preheat the oven to 350°F.
1 Combine the four, cocoa, baking powder, soda, salt, and cinnamon; set aside.
2 With a mixer, beat together the butter and the sugar until they are smoothly blended. Add the eggs to the butter and sugar mixture one at a time, beating well after each addition. With a spoon, stir in the vanilla, orange peel, and zucchini.
3 Alternately stir the dry ingredients and the milk into the zucchini mixture, including the nuts with the last addition.
4 Pour the batter into a greased and flour-dusted 10-inch tube pan or bundt pan. Bake in the oven for about 50 minutes (test at 45 minutes!) or until a wooden pick inserted in the center comes out clean. Cool in pan 15 minutes; turn out on wire rack to cool thoroughly.
5 Drizzle glaze over cake.
Glaze: Mix together 2 cups powdered sugar, 3 Tablespoons milk, and 1 teaspoon vanilla. Beat until smooth.
Cut in thin slices to serve. Makes 10-12 servings.
