I love homemade quesadillas! I won't even order them out anymore b/c my hubby and I make them better! lol

Chicken breasts
Flour tortillas (burrito size)
Shredded cheese (I use the mexican blend cheese, but any kind works)
various fillings (The more the better and variety is what makes these great. You can't really go wrong.)
My typical quesadilla has chicken, cheese, sliced green onions, sliced black olives (from a can) and mushrooms.

(Brown the chicken.) Put a little butter or nonstick spray in a large skillet. "Build" your quesadilla on a plate first. Put ingredients on one side of tortilla. Cheese, chicken, other extras of your choice, more cheese. Fold empty side over and put in skillet. You just let it get brown on both sides. The cheese will melt and helps hold it together. Serve with salsa and sour cream. I LOVE them!

Broiled Barbque Chicken


Boneless Skinless Chicken breast
1 bottle of BBQ Sauce
1 tsp per piece of chicken for the following spices
Parsley
Lemon Pepper
Garlic Salt


Pre-heat your broiler in your oven.
Place chicken on broiler pan after you have put the spices on your chicken. Broil chicken, for 20 minutes make sure you turn the chicken often other wise it will be burn on the outside and will not be done on the outside. 5 minutes before it is time to pull the chicken out of the oven, add the BBQ sauce evenly over all the chicken pieces. Then pull out of the oven and add sides. I like to put a baked potato with this dinner and some greens along with some corn that I cooked on the broiler as well. Yummmmm. Sweet Potatoes are also another favorite of mine. Happy Eating.

My favorite is chicken divan:
2 boneless chicken breasts cubed and cooked in olive oil
1 bag frozen broccoli (can use fresh and steam it)
2 cans cream chicken soup
3 tablespoons mayo
garlic croutons
Montery jack cheese

Cook chicken in pan with olive oil, cook broccoli in pan with water, when both are done Layer a 9x13 baking dish with the broccoli then spread the chicken over the top.
In a bowl combine soup, mayo and some spices, like seasoned salt. pour mixture over chicken and broccoli. Sprinkle croutons over the top and cover with a generous amount of cheese, bake at 350 till cheese is melted and it is hot all the way through. Always a pleaser!!

bone or boneless chicken thighs. Get a fry pan that can go in the oven. Heat oven to 350. Put 1-2 tablespoons olive oil in the bottom of the pan, place your chicken thighs in the fry pan, sprinkle with garlic salt, pepper, any other favorite chicken seasoning. You could cut up yams or potatoes french fry style and put them in too. Sprinkle everything with a little olive oil. Bake for 1 hour and 15 minutes. The chicken and potatoes are so crispy and good and you think this is fattening but it's all good fat and one of my favorites!

Bourbon Chicken

2 lbs boneless chicken breasts, cut into bite-size pieces
1-2 tablespoon olive oil
1 garlic clove, crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce

Heat oil in a large skillet.

Add chicken pieces and cook until lightly browned.

Remove chicken.

Add remaining ingredients, heating over medium Heat until well mixed and dissolved.

Add chicken and bring to a hard boil.

Reduce heat and simmer for 20 minutes.

Serve over hot rice and ENJOY.

Take 3 or 4 boneless skinless chicken breast and poke them with a fork, then pour light italian dressing on them and let them marinade for at least 30 minutes but the longer the better. Bake it at 350 for 30 -40 minutes. While its cooking, cook some fettucine noodles. Put the fettucine on a plate, cut the chicken into strips then put it ontop of the fettucine sprinkle parmesean cheese on top and thats it!!

Chicken breasts
Swiss cheese slices
Cream of chicken (or anything you prefer) soup
1/2 soup can of white wine
Pepperidge Farm herb stuffing mix
1/2 stick of butter

Season chicken breasts and place on 9X11 pan
top with swiss cheese slices
mix soup and wine, cover chicken with this mix
top with stuffing mix
melt butter and pour over the top

Bake for about 45 minutes, covered, @ 350. Uncover for about 5 mins to let stuffing brown.

Great comfort food!!!

drunk chicken.
take the whole chicken and season it with a good rub, inside and out and under the skin as much as possible.
open a can of beer, drink about 1/4 of it, then insert the can into the cavity, keeping the can and chicken upright.
Grill or roast in oven , takes about 45 min. to a hour til golden brown and juices run clear.
some people call it beer butt chicken.

I got this recipe off of Kraftfoods.com and it is really the best chicken I have ever had in my life.

4 small boneless skinless chicken breast halves (1 lb.)
2 Tbsp. flour
1 Tbsp. oil
3/4 cup fat-free reduced-sodium chicken broth
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 Tbsp. chopped fresh parsley

COAT chicken with flour. Heat oil in large skillet on medium heat. Add chicken; cook 5 to 6 min. on each side or until cooked through (165°F). Remove chicken from skillet, reserving drippings in skillet. Cover chicken to keep warm.
ADD broth to skillet; stir to scrape up browned bits from bottom of skillet. Add cream cheese; cook 2 to 3 min. or until cream cheese is melted and sauce starts to thicken, stirring constantly with wire whisk.
RETURN chicken to skillet; turn over to coat both sides of chicken with sauce. Cook 2 min. or until chicken is heated through. Sprinkle with parsley.

I didn't use the parsley but it was still Awesome.
