Yes, my grandmother makes this chocolate mayonnaise cake with peanut butter frosting, it is delicious. You would never know there is mayo in it. It is very moist. You can find a number of recipes online.

Yes mayonnaise cake is superb, but do not substitute and use cheap or non-fat or low fat, it will not come out as good as the real thing. The mayo takes the place of the eggs and oil because that is what mayo is made of.
3 c. flour
1/3 c. cocoa
3 tsp. baking soda
1/2 tsp. salt
1 1/2 c. mayonnaise (use only "Good Foods" or " Hellmann's "mayonnaise
1 1/2 c. sugar
1 1/2 c. water, cold
2 tsp. vanilla extract
Heat oven at 350^
Sift dry ingredients together and set aside. In a mixer bowl with electric beaters beat mayonnaise and sugar until well blended continue beating and add water and dry ingredients alternately until all is well blended. Add vanilla and mix a few more minutes to make sure everything is well mixed. Put into a 13x9 inch cake pan and bake for 40 minutes or until test done. Cool on rack . Frost with your favorite frosting( mine is peanut butter frosting) my significant other makes the BEST!

yes, makes a good substitute for eggs, roughly 1 heaping tablespoon per egg. It makes the cake softer, richer and moister than using eggs. recipesource.com has a few other mayo cake recipes as well.
Title: Chocolate Mayo Cake-
2 c Flour
2/3 c Cocoa powder
1 1/4 ts Baking soda
1/4 ts Baking powder
1 2/3 c Sugar
3 md Eggs

Preheat oven to 350~. Grease a 9″ circular pan. Mix first
four ingredients and set aside. Beat next 3 for three
minutes or until fluffy. Beat in mayo. Add flour,
alternating with water. Pour into pans. Bake 350~ for
30-35 minutes. Cool in pan 10 minutes. Remove and cool on
wire rack. Icing or powder sugar the top of cake.

Yes many cakes (especially chocolate/ devil's food type) call for mayonnaise. It adds density (because of the eggs) and helps the cake rise in the oven. Also adds a little flavor. Just enough to make the consumer wander: What is it?
In a way Sour Cream does the same thing.

INGREDIENTS
2 cups all-purpose flour
1 cup sugar
3 tablespoons baking cocoa
2 teaspoons baking soda
1 cup water
1 cup mayonnaise
1 teaspoon vanilla extract
BROWN SUGAR FROSTING:
1/4 cup butter or margarine
1/2 cup packed brown sugar
2 tablespoons milk
1 3/4 cups sifted confectioners' sugar
DIRECTIONS
In a large mixing bowl, combine flour, sugar, cocoa and baking soda. Add water, mayonnaise and vanilla; beat at medium speed until thoroughly combined. Pour into greased 9-in. square or 11-in. x 7-in. x 2-in. baking pan. Bake at 350 degrees F for 30-35 minutes or until cake tests done. Cool completely.
For frosting, melt butter in a saucepan. Stir in brown sugar; cook and stir until bubbly. Remove from the heat and stir in milk. Gradually add confectioners' sugar; beat by hand until frosting is of spreading consistency. Immediately frost cake.
Editor's Note: Light or low-fat mayonnaise should not be substituted for regular mayonnaise in this recipe.

Yes...you can use mayonnaise in place of the oil and eggs in a recipe. For a healthy alternative, use a fat free/cholesterol free egg substitute in place of the eggs and no-sugar added apple sauce in place of the oil. You will get a moist, fat free cake that is delicious and almost guilt-free (it will still have a good bit of sugar in it).

Weird ..... Thing is, I saw a very good freind make some fruit salad ... I love the stuff.... She put Mayonnaise in it !!! I krinckled my nose, she said, it's suppose to be made this way , you never complained. So, Im not suprised with this question at all.... At least not now.
