They are French in origin, and delicate sponge-like delicate little cookies that require being baked in a special form.

Here is a recipe--now go out and get the forms and start baking! YUM

Madeleine Cookies
Recipe:
1 cup Butter (do not use low fat butter or margarine) Melt butter and let it cool for 20 minutes before using.
1 cup Sugar
1 cup Flour
2 Eggs
1/2 teaspoon vanilla

Preheat oven to 350o.

Using mixer, combine butter and sugar, then add eggs and vanilla. When well blended, gradually add flour until all ingredients are mixed together.

Grease and dust with flour, 3 Madeleine pans or if using one Madeleine pan, thoroughly wash, dry, regrease and flour after baking each batch of cookies. (Pans can be greased with 1 softened butter, approximately teaspoon per pan or a cooking spray.)
Spoon mixture by teaspoon into cookie molds being careful not to overfill.

Bake 8-10 minutes until golden grown. (Electric oven may take a little longer.)
Let cool and dust with powdered sugar or cocoa powder
