Peel & slice 1-2 cucumbers thin.

Make a dressing of cider vinegar w/ sugar. (About 1/4 cup vinegar to 2 tblsp. of sugar. - increase to taste. A dash of salt & pepper.)

This makes a kind of fresh pickle salad that complements the crispy richness of pork chops.

If your looking for simple go buy a box of Betty Crocker Au Gratin potato's, and get a can of corn, serve with a nice salad.. Viola, dinner!

i like baked sweet potatoes with pork. you can cut them up and oil them and sprinkle them with some spice rub or just bake them whole.

pan fried potato wedges are always good -- just brown them well and then add about 1/2 cup liquid to steam them soft (wine, broth, water if nothing else). you can make this "potatoes vesuvio" by using lots of garlic and oregano while cooking it. add some baby butter beans, quartered artichoke hearts or even green peas for a little extra pizzaz and presentation.

i usually like things a little sweet with pork. you can add sweet marsala wine or a tablespoon of brown sugar to most vegetables and give them a quick pan fry to give them a little sweet glazed flavor (greenbeans, peas, asparagus with marsala, carrots with brown sugar).
