We're going to be having a picnic for my daughters birthday, and I need some ideas on side dishes that are inexpensive to make, and cold there will be no electricity there. I'm making pasta salad, macoroni salad, cole slaw, jello jigglers, and wanted to make one more side, NOT potatoe salad.

fyi theres going to be about 40 people there.

A fruit tray (pineapple,cantaloupe, watermelon and honeydew) with dipping sauce.. (take a small package of strawberry jello, mix half of the package (gently) with a container of cool whip (whipped topping). You can use 2 tubs of whip with the entire jello package if you need to double the recipe.

It was a hit at a potluck dinner - and it's somewhat healthy.

Fruit Salad

Here are some suggestions.

Savory deviled eggs
12- hard-cooked eggs, peeled
1/2 c. light mayonnaise (or regular mayonnaise)
1 tbsp. honey mustard
1/4 tsp. black pepper
1/2 c. large pimiento-stuffed olives (about 8), chopped
parsley for garnish
1. Cut eggs in half lengthwise and spoon yolks into a bowl. Reserve whites. Mash yolks with a fork. Stir in mayonnaise, honey mustard and black pepper.
2. Reserve 1 tbsp. of the chopped olives. Fold remaining chopped olives into yolk mixture.
3. Fill whites with the yolk mixture. Sprinkle reserved chopped olives over the tops of the eggs. Refrigerate for at least one hour.
Variation: Prepare filling, omitting olives. Instead, stir in 4 strips cooked, crumbled bacon and 2 tablespoons of shredded cheddar cheese.

Watergate Salad
1 lg can crushed pineapple
2 small boxes pistachio instant pudding
1 c. mini marshmallows
1/2 c. coconut
1 lg carton Cool whip
Mix pineapple and pudding mix together; then add marshmallows,
coconut and Cool whip. Mix and Chill.

This is my version of ambrosia. My family is not too crazy about fruit cocktail, so mine is simple.
4-5 small cans of mandarin oranges, drain all the cans except one
1 bag of mini marshmallows
1 small container of sourcream
Mix all ingredients and place in bowl, cover and store in refrigerator for at least one hour. The longer the better. Believe it or not this is a sweet tasting dish, i guess its because of the marshmallows.

Crab Salad
2 pounds of imitation crab meat- chopped into small cubes or shredded
8 oz -(1 cup) of mayonnaise
4 oz block of cream cheese
2 celery stalks finely chopped
2 green onions- white and green parts finely chopped (I'm not crazy about green onions so I only use one or sometimes omit)
Mix ingredients together. And chill for a couple of hours.

taco salad w/ beans instead of ground beef

Use mayo instead of Miracle Whip.

carrot salad - increase recipe
3-4 cups freshly grated carrots
1/2-1 cup raisins
1 large apple, cored and chopped
1/4 to 1/3 cup mayonnaise

Combine all ingredients in a medium sized bowl.
Can use yogurt instead of mayo.
Can add pineapple chucks.

They both are Just the thing for your health. If you eat both, you're better off. But yea, I had choose fruits because they taste better.

It is determined by the fruit or veggie associated with a comparison. In the event that you compare a farreneheit to a carrot, the carrot is the better of the two nutritional. But since you compare an avocado to the carrot, then this avocado is better. The two the apple and avocado, are fruits.

well you could do deviled eggs or

tortilla pinwheels

8 oz. dairy sour cream
1 (4 oz.) can diced green chilies
1/2 c. chopped green onion
5 (10 oz.) flour tortilla
8 oz. cream cheese
1 c. grated Cheddar cheese

Mix all filling ingredients together, divide evenly and spread over tortillas, roll up, (slice like a jellyroll cake)
cover tightly with plastic wrap.
Refrigerate until ready to serve.

How about Cole slaw with dried craisins or cherries in it... It's really inexpensive and easy!

How about a veggie and dip tray? Kids like these and so do adults because they don't feel guilty about snacking when they eat veggies.
