There's nothing really specific that you should do, other than general strength training (push-ups, weights, etc.)
The first thing that you will learn will be how to fall properly, and they will take care of that in the dojo before you actually start learning throws.

Depending on what kind of shape you are already in I would do some exercises for the lower back and shoulders. A good instructor will not push you beyond a certain point and build you into shape but not all instructors take the gradual approach with new students. Some crunches and push-ups along with lower back and shoulder type exercises will probably make it less sore for you that first week and help prep you for your workouts.

Most classes will involve drills and calisthenics, that you can practice on your own. After class I am sure the instructor will be happy to give you some home work. Judo is difficult to practice without a partner but there are definitely things you can do to on your own.

usually the class starts out with a warm up and stretching which includes push up, sit ups, etc. but if you want to do some on your own, i would recommend some weight training, cardio, core workouts for your hip throws, some extra sets of situps and back exercises to strengthen your midsection, and hand strength for grippin the gi.
mostly likely they will start you out with learning how to fall properly to avoid injury.

I think that i would concentrate on stretching out. Depending on how good shape you are in you may want to start to increase your endurance, it may be only a week but it could not hurt to start jogging or walking .
