I am sure the church thought Galileo was a know-it-all too. Some people actually do know more than others though.
I think a few atheists have difficulty understanding how otherwise rational people can believe in talking animals, 900 year old men, Noah's ark, virgin birth, people living in whales, zombies crawling out of their graves and walking around, the earth is 6000 years old, etc. and think that people who believe in such things must be nuts. Meanwhile many Christians tell us that anyone who doesn't believe in those things must be nuts.

Not 'know-it-alls', more like want-to-know-it-alls. We are always trying to better our own knowledge of reality, therefore tend to have a far greater sense of things than people who even though they are supposedly adults, still grovel around worshiping invisible, imaginary creatures.

Because we know there isn't a god. That's a lot more reassuring than 'believing' or having 'faith.' I'm halfway kidding, but your question was kind of offensive. I think people of faith think that everyone who isn't like them is making a choice to be different, but is predisposed to be christian, straight, etc. I couldn't believe in god if I wanted to. Not even if it means going to hell... which I don't believe in.

Because we have to come up with our own answers, so, generally, we need to be able to answer any question that comes our way. If we weren't able to do so, then we would just adopt cookie-cutter doctrine like everyone else.
