Do you mean Muslim Persians as the standard Persian? There are Muslim Persians, Jewish Persians, Christian Persians, Zoroastrian Persians, and Baha'i Persians. Baha'is are the largest minority in Iran and their members came from all the other groups. The groups mentioned so far, have different but related religions. There are also atheist Persians. They are all Persian from a Persian culture. But we must realize that in the different parts of Iran, there are also many sub-cultures as well. Jewish Persians would be Jews who are influenced by the Persian culture rather than say the culture in another place where Jews also live, like Lebanon, Syria, Russia, etc.

Firstly- they call themselves Persians, as they don't want to be associated with the current country and ideology of Iran. They hearken back to a day when Persia ruled the region and was a bastion of relative freedom of religion.
So- given that Jews were kicked out of most decent countries in Europe due to the presence of the Church, they found refuge in Persia where they were allowed to live in relative freedom.
Of course- they are no longer really welcome in Iran, so pretty much all of them have emigrated to one country or another. Many to the US.
I guess I don't understand the question. Is there a 'standard' Persian? I guess a standard Persian would be Muslim.

Most Persians, or Iranians, as they are known today, are Muslims. A very small minority in Iran is Jewish.
Most Jewish Iranians fled to the U.S after the Muslim revolution in Iran back in 1980, when the Shah was deposed and Ayatollah Humeini came into power.

One more comment--the answer above about Jews in Iran loving it so much that they turn down all this money to move is, in a word, crap. Just another propaganda ploy by one of the most anti-Semitic and despotic governments around today. What do you think really happens to them once they step forward and identify themselves as Jews? If you think they get the money and free passage out I've got a bridge in Brooklyn I'd like to sell you...

There are still Jews in Iran (used to be Persia) and they live almost as prisoners. They are not allowed even to make phone calls to relatives living outside Iran. They are treated as second class citizens and don't have the same rights and freedoms as their Muslim neighbours and colleagues.
This is true of Jews in almost all Muslim countries; but they all expelled the Jews, whereas Iran didn't.
The only difference between Iranian Jews and other Iranians, is that one group is Jewish and one is not!

I know a couple of families of Jew from Persia. They were horribly persecuted there, and consider themselves lucky to be out.
