Do not overfill your travels. I have been in Australia, nearly two years back, and in 7 weeks I did see a lot of the country, but with a look on the map it is just a few little bits I actually did see.
England, Germany and Italy all rate a couple of weeks each, to see the real country and not just one or two towns.
I have not been to Hawai, but that is an other destination that most people spend a couple of weeks.
If you have more than a couple of months, plan to stay in each of the countries on your list, but if you have less than that, just go to one continent.
Lonely Planet guidebooks are good for individual travelers, you get info on hotels (and other places to stay,) sights, museums, places to eat and go out, how to travel between countries and towns and in them, all with prices and opening times and quality warnings where needed.
What I enjoyed most in Australia where a tour round Tasmania and even better the overland-tour from Perth to Alice Springs, including the Red Centre.
Australia has many short tours, often running 3 days to a week from almost all towns. I had several of those, combined with train travel, into one long trip.
They offer a range of accommodation, sometimes even within one tour, from camping 'wild' (Perth to Alice) to motels and hotels, (sometimes even with stars.)
I had a travel agency in the Netherlands to get it arranged for me, but if you google on the name of a town and tours you will get the same tours.
In Europe a lot depends on the time of the year. If you travel in July and/or August you need to book ahead, if you travel the rest of the year, you can just show up in a town, and ask at the tourist information office.
Hotels and bed and breakfasts (and hostels) enough. BB's might be very suitable for you, as you will always want to share a room.
Do not just do the bigger towns, you will enjoy the difference between bigger towns and small towns and villages in Europe, and the only way to appreciate the countryside is to stay in it, villages are the best for that.
If you travel April to October (included) you will find that travel industry in most of Europe is alive and awake. November to March some sights close, (theme parks and the smaller adventure parks,) and castles and museums in smaller towns have short opening times, (often only in the weekends.)
Travel in Europe can easily be done by train, but you can also fly from country to country, as it is often included in international or round the world tickets.

How about getting a "Round the World" flight.
One possible route would be from a USA gateway city, maybe Los Angeles, to Hawaii, on to Auckland NZ. Then Sydney, Singapore, London and back to the USA. Many variations on this theme are possible.
Auckland it almost British and Sydney so typically Australian. The walk over the bridge is a must, if you have a head for heights.
Of the airlines QANTAS and Air New Zealand offers this type of deal. as does Northwest. If you use Northwest you could substitute Amsterdam for London (Personally I would, but then I live in London)

Go to websites such as Globus Tours, Trafalgar Tours or Swain Tours. You don't have to book these but they will give you some itinerary ideas and places to visit. Australia is as big as the U.S. so plan on travel time from place to place.
