Pineapple Casserole
20 oz pineapple tidbits
1/2 c sugar
3 tbs flour
1 c shredded cheddar cheese
1/2 - 1 stick butter
1 c ritz cracker crumbs
Drain pineapple, reserving 3 tablespoons of juice. Combine sugar and flour. Stir in reserved juice. Add cheese and pineapple. Combine butter and crumbs. Sprnkle over mixture. Bake uncovered at 350° for 20 - 30 minutes.

Melt butter and pour over the top of cracker crumbs.
Bake for 30 minutes in preheated oven.

1 cup white sugar
1 1/2 cups bread crumbs

2. In a large bowl combine pineapple chunks, cheese, pineapple juice, flour and sugar. Spoon into a 9x13 inch baking dish. Top with bread crumbs and butter slices.

Pineapple tart flambe
Ingredients
500g/1lb 1½oz sweet shortcrust pastry
For the filling
1 medium pineapple
45g/1-1½oz unsalted butter
100g/3½oz caster sugar
50ml/3½ tbsp dark rum
For the filling
220g/8oz mascarpone cheese
2 large eggs
30g/1oz plain flour
1 tsp vanilla extract
pinch of salt
To finish
icing sugar (optional)
Method
1. Pre-heat the oven to 180C/350F/Gas 4.
2. Roll the pastry out to line a 27cm/11in tart tin. Prick the base, then chill for at least half an hour.
3. Blind bake the pastry for 12 minutes by lining the pastry with clingfilm and weighting with dried beans.
4. Remove the beans and the cling film and bake for another eight minutes to dry out.
5. Slice the top and the base of the pineapple, and cut it into eight long wedges, from top to bottom.
6. Cut the tough core out of each wedge, then slice the wedges. Melt the butter in a frying pan until foaming.
7. Add the pineapple pieces and fry for about three minutes. Then sprinkle over 80g/3oz sugar, and pour in the rum.
8. Stir, allow to heat briefly, then slowly tilt the pan towards the flame, or light with a match. Let the flames flare up then die down. Cook for 3-4 mins longer until the juices are reduced to a thick rich syrup.
9. Cool slightly, then lift the pineapple out and arrange in the pastry case. Reserve the syrup.
10. To make the filling, whisk the mascarpone with all the filling ingredients, including the last of the sugar and the syrup left from the pineapple.
11. Pour over the pineapple. Bake for about 25 minutes, until the filling has just set.
12. Dust with icing sugar and serve.

my mother makes a great pineapple cheese casserole, she serves it with ham.
1 large can pineapple tidbits (pour juice off and reserve)
Half cup sugar
3 tablespoons flour
1 cup grated cheddar cheese
1 cup ritz cracker crumbs
1 stick butter, melted (put a some of this in the casserole dish to grease)
Preheat the oven to 350 degrees F.
Grease a medium-size casserole dish with butter.
stir sugar,flour and cheese together. Add the drained pineapple chunks. Stir until combined. Pour the mixture into the buttered casserole dish.
In another bowl, combine the cracker crumbs, melted butter, and a little of the reserved pineapple juice. Stir together then spread crumb mixture on top of pineapple mixture.
Bake for 25 to 30 minutes, until golden brown and bubbly.

1 tablespoon all-purpose flour

2 tablespoons dry tapioca
2 tablespoons cider vinegar
1 (8 ounce) can crushed pineapples, juice reserved
4 apples, cored and chopped
2 cups unsalted peanuts
1 (8 ounce) container frozen whipped topping, thawed
In a medium saucepan, stir together the flour, sugar, tapioca, vinegar, and the reserved pineapple juice.
Cook over medium heat, stirring constantly, until thick.
Remove from heat and chill.
In a large bowl, combine the pineapple, apples, peanuts, and chilled tapioca mixture.
Fold in the whipped topping and chill for at least 1 hour before serving.

Escalloped Pineapple
1 1/2 cups sugar
1/2 pound butter
2 eggs
1/2 cup milk
5 slices bread, cubed
2 1/4 cups pineapple chunks in juice
Cream sugar and butter. Add eggs, milk, bread cubes and pineapple chunks with juice. Toss together. Bake one hour at 350F in one large oblong flat pan or two small square ones. Can be doubled easily. May be served with ham or as a dessert. Serves 4 to 6.
Fried Pork Stuffed with Pineapple
1 pound pork
1 teaspoon salt
1/4 teaspoon pepper powder
1 egg
1/2 small pineapple, sliced 1/2 inch thick
1/2 cup bread crumbs
oil for deep frying
Divide pork into 4 pieces by slicing it about 1/2 inch thick. Make a shallow cut into pork and open it flat, season with salt and pepper. Wrap pineapple with pork. Fasten with wooden pick. Dip into egg and cover with bread crumbs. Deep fry over medium heat temperature until golden brown. Serve warm.
Brown Lentil Bake with Pineapple
2 tablespoons olive oil
2 large onions finely chopped
1 cup dried lentils cooked and drained
2 tablespoons chopped parsley
1 teaspoon herbes de provence
2 tablespoons soy sauce

1/3 cup whole wheat bread crumbs
1 8 ounce can pineapple chunks or rings
Preheat the oven to 350F. Heat the oil in a large sauce pan and saute the onion for 10 minutes until soft and lightly browned, stirring occasionally. Add the garlic, lentils, parsley mixed with herbs and soy sauce. Mash by hand or puree roughly in a processor until the mixture holds together. Season with pepper. Transfer to a shallow baking dish. Sprinkle with the crumbs. Bake for 20 minutes then remove from the oven. Carefully place the pineapple on top and bake for another 10 to 15 minutes until the pineapple is hot.
