Here is my favorite.

Southern-Fried Chicken

1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard

1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.

2. In a large deep cast iron frying pan, melt lard over medium-high heat to 375 degrees. I use the splatter test, put a little water on your fingers and flip it into the grease, when it splatters the heat is right. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels

INGREDIENTS:
2 frying chickens, about 2 1/2 to 3 pounds each, cut into serving pieces
2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup milk
vegetable shortening for frying
1 tablespoon bacon drippings
PREPARATION:
Wash chicken and pat dry.
In a heavy brown paper bag or large food storage bag, combine the flour and salt and pepper; shake to blend well. Pour the milk into a wide shallow bowl.

Heat 2 to 3 inches of shortening in a deep heavy skillet over medium heat, or electric fry pan set at 375° F.

Add the bacon grease. When a drop of water spatters when it hits the hot oil, dip some of the chicken pieces into the milk then place in the bag and shake to coat evenly. Arrange the chicken pieces in the fat, making sure not to overcrowd. Fry the chicken until outside is golden brown and crisp, about 15 to 20 minutes, turning once to brown both sides. Reduce heat to 350° F and fry until cooked through golden brown, about 15 minutes longer. Turn once. Drain chicken on brown paper or paper towels, adding a little more shortening and bacon grease if necessary, setting or regulating the temperature as for the first batch.
Transfer the chicken to a large platter for serving.
Serves 8.

Southern Fried Chicken (delicious and easy to make)

INGREDIENTS

1 whole fryer chicken(or chicken parts), about 3-1/2 pounds
2 cups all purpose flour
1 teaspoon sweet paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme leaves
Salt and pepper to taste
About 2 cups vegetable oil

Cut the chicken into 8 pieces, dividing into 2 each of the legs, thighs, wings and breasts.
Combine the flour, paprika, garlic, thyme, salt and pepper on a plate or piece of waxed paper
Add the pieces of chicken and coat well on all sides, then shake off excess flour mixture
Place enough of the oil in a large skillet to come up about 1/2 inch. Heat over medium-high heat.
Add the chicken pieces, skin-side down. (Do not overcrowd the pan. If necessary, use 2 pans.) Fry until golden brown, about 5 minutes.
Turn and brown the other side, about 3 more minutes. Reduce heat to medium-low Cover and cook about 15 minutes.
When chicken is almost done, uncover and increase heat to medium-high. Fry until brown and crispy, about another 5 minutes on each side.
Remove from pan and place on a cooling rack set over paper towels. If desired, sprinkle tops with a little extra salt.

I don't know how southern it is but when I fry chicken, I wash the chicken well, soak it in salt water for about 10 minutes or while I'm making my flour mixture.
flour mixture is about 2 cups flour, garlic, onion powder, cayenne pepper, black pepper, 1 chicken bullion cube, Italian seasoning, oregano, Lawry's Season Salt. Season the flour heavily,I do the taste test to see if its seasoned right.
rinse chicken, pat dry, season the chicken with pepper, Lawry's and whatever spices you like.

Coat chicken in flour and fry in hot shortening.
Crisp on side well turn over, crisp till golden, then put a lid over it and simmer about 20-30 minutes, till done.

It always comes out good, but I don't make the breaded chicken like some.

Here's a recipe for you ~

chicken parts or 1 frying chicken, cut up
1 cup buttermilk
2 cups self rising flour
salt and pepper (I usually use 1 tsp. salt and 1/2 tsp freshly ground black pepper)
oil (for frying)


Wash chicken and pat dry.
Pour buttermilk into a small bowl.
Dip chicken into buttermilk, covering all surfaces.
Mix flour, salt, and pepper and pour into a 1 gallon zip lock bag, place dipped chicken into flour mixture and close bag.
Shake bag well making sure all surfaces are covered with flour.
Heat 3/4 inch of oil in a heavy skillet over medium heat.
Shake chicken again and put into oil, brown lightly on both sides, reduce heat to medium low and cook chicken to 180 degrees internal temperature on an instant read thermometer, turning frequently.
cooking time may vary slightly depending on your heat setting.

I do fried chicken two different ways. One is to roll my chicken pieces in a mixture of flour, seasoning salt, garlic salt, paprika, black pepper and chili powder. Then I fry slowly in my electric skillet for about 1 hour at 250 degrees. Put the lid on the skillet, only pick it up every 15 minutes to turn the chicken. My aunt makes her fried chicken this way, she taught me and although mine doesn't turn out as well as hers its still pretty good.
The other (and more simple) way I make fried chicken is to marinate my chicken pieces in Kraft Ranch Dressing for about 30 - 45 minutes, then roll it in Extra Crispy Shake and Bake. Then I put the chicken in a casserole dish and bake at 350 degrees for 45 minutes. Techinally it isn't fried, but my husband says it is the best fried chicken he has ever eaten.

take a bag of flour and some uncooked chicken mix together until really white. Toss into skillet with veggie oil and then fry until golden brown. add salt and pepper if needed then eat.

GENUINE SOUTHERN FRIED CHICKEN

3 teaspoons salt, divided
1/4 cup butter
3/4 cup all-purpose flour
1/2 teaspoon fresh ground pepper
vegetable oil

Sprinkle chicken with 2 teaspoons salt. Place on platter, cover with wax paper and refrigerate 4 hours or overnight. Pour 1 inch oil into large, deep, heavy skillet. Add butter and heat over medium-high heat to 375 F.
Meanwhile, rinse chicken under cold water. Place flour, remaining 1 teaspoon salt and the pepper in paper bag; shake well. Add half the chicken; shake to coat well. Shake off excess flour. Repeat with remaining chicken. Add chicken to skillet in single layer so pieces do not touch. (If necessary, cook in batches. Keep cooked pieces warm in 200 F. oven.) Cook until evenly golden brown on both sides, turning once, about 15 minutes. Drain well on paper towels. Serve hot.

Shortening

Soak chicken in buttermilk 15 minutes. Combine flour, season-all and pepper. Coat chicken well with mixture. Heat oil in large skillet on medium heat. Cover and cook 15 minutes on 1 side, turn and cook covered on medium heat until tender and brown (about 20 minutes).

I agree with Chris W; you can't go wrong with Paula Deen. If I want to cook something 'Southern' I usually use her recipes and tips. She is awesome!
