If impressing is an adjective, then it is 'grammatical'

But this does not mean it is better, I've never heard your suggestion, I would always go with impressive.

It is GRAMMATICAL to state anything -- being grammatically correct is what you want. Yes, it is better to say impressive in that sentence. Good Luck.

Impressive would be better, but "impressing" would be acceptable.

Impressive is correct choice; however, stylistically, it says nothing. Better to follow that up with something specific.
