Dinner is about the only time I have vegetables so i try to put alot of them into it, I was wondering what else I could add to chili con carne (besides what i already do, which is onion, garlic, chilli, tomato, carrot, kidney beans & mexe beans). Mushrooms or something? I don't want it to taste out of place with the rest though. Thanks!

Vegetable Chili

2 tablespoons olive or canola oil
2 large onions, coarsely chopped
2 cloves garlic, finely chopped
1 tablespoon chili powder
2 stalks celery, diced
2 large carrots, diced
1 sweet red or green pepper, diced
1 can (16 ounces) crushed or diced tomatoes
1 cup vegetable broth
2 yellow squash
1 can (16 ounces) red kidney beans, drained and rinsed
1 cup frozen corn kernels
2 tablespoons chopped parsley
1/2 cup low-fat sour cream

What to Do
1. In a Dutch oven, heat oil over moderate heat. Add onions and garlic; sauté, stirring, about 7 minutes or until softened and golden. Stir in chili powder and cook 2 to 3 minutes longer.

2. Sauté celery, carrots, and sweet pepper, stirring frequently, 6 to 7 minutes or until softened.

3. Add tomatoes and broth; bring to a boil. Add squash, kidney beans, and corn. Cover and simmer, stirring occasionally, 25 to 30 minutes or until tender.

4. Stir in the parsley and top each serving with sour cream.

You could still add meat to this recipe.

You could add some grated carrot and/or finely chopped mushrooms to pad out the meat, but otherwise I'd say to keep it simple. Mind you, chocolate is vegetable in origin. :-) CHILLI CON CARNE Serves 3 INGREDIENTS 2 onions 1 tablespoon of sunflower oil 500g of minced meat 2 teaspoons of chilli powder 400g tin of plum tomatoes* 1 beef stock cube 400g tin of red kidney beans METHOD Peel the onions and chop them into tiny pieces. Put the oil into a frying pan on a medium heat. Add the onion. Fry the onion for about 2 minutes. Stir frequently to stop it sticking. Put the meat into the pan and fry for 2 to 3 minutes, stirring all the time. By this time, it should have broken up and be an even colour, with no pink bits. Add the chilli and stir thoroughly. Open the tin of tomatoes. Pour the juice into the pan. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the pan). Pour the chopped tomatoes into the pan. Crumble the stock cube into the pan. Open the tin of beans and drain off the liquid. Add the beans to the pan. Stir thoroughly. Continue to cook, stirring as the mixture boils, until the sauce has reduced. ADDITIONS & ALTERNATIVES Use minced beef, lamb, pork or turkey, whichever is cheapest. Add 2 teaspoons of ground cumin. Cumin is an Asian spice, which the Spanish brought with them to the New World. Add 2 squares of dark chocolate. Use at least 70% cocoa cooking chocolate for preference, but dark eating chocolate will do. Chocolate comes from the New World, and is used as an everyday cooking ingredient. TIPS Let it cool and reheat it: the flavour improves with reheating. * Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.

I made some not long ago and included kale (it's a green leafy vegetable that holds up better to long exposure to heat than spinach), zucchini, mushrooms, celery and bell peppers.

Nothing will taste out of place because chili is usually slow cooked and the flavours combine.

You can add Corn and Celery to the Chili. Not too sure how Mushrooms would taste in Chili.

chili peppers (any variety) sweet pepper , slight bit of celery
a few mushrooms would be ok. For my taste that's about
all. Some folks put in enough veggies that the outcome
resembles veggie soup -- all a matter of taste.

Corn and bell peppers are good in chili. I've also added zuccini. You can add whatever you like.
