Spanish Rice
2 tablespoons olive oil
1 1/2 pounds ground beef, 85% lean
1 large yellow onion, finely chopped
1 green bell pepper or 1/2 green and 1/2 red, chunks
1 jalapeño pepper, sliced
1/2 teaspoon salt
1/2 cup olives, green, chopped and pitted salad
1 8-ounce can tomato sauce
1/8 cup capers
10 ounces water
4 tablespoons sofritto*
1 package sazon Goya**
2 cups white rice
Brown lightly (saute) vegetables and put aside. Brown and crumble ground beef. Add salt.
Saute vegetables with ground chopped meat. When beef is cooked, add sauce, olives and remaining ingredients. Cook 1-1/2 hours. Do not let dry out. Add water if necessary.
Cook rice as usual. Create bed of rice and add meat to top.

RICE AND PEAS!!!!
Seriously, this Carribean staple is the ultimate rice dish, is so easy, and always impresses.
sautée a clove of garlic in a little oil, add a 1/2 cup of coconut milk and a 1/4 tsp of dried thyme, let the milk simmer and thicken for a couple of minutes, and then mix in about 2 cups of cooked rice. If you've got some, add some cooked red beans, but honestly this tastes great even without it. Season with salt and you're done!
Just take some regular cooked rice (pretty much any kind will do, but long grain is preferable)

Some of the simplest ways to rev up your rice recipes is to replace some or all of the liquid with an alternative. Such as , chicken, beef or vegetable broth, white wine or coconut milk.
You could also add garlic, onion, mixed herbs etc. Be creative and you'll have alot of fun. Rice is one of those things that is considered a 'blank canvas'. You can throw just about anything into it and make a masterpiece.

No one's come up with this one yet. My fav for rice. Use a pint glass for measuring the rice. As it's cooking add 6-7 cloves, 12 (ish) cardomoms and a pinch of that stuff that makes it yellow. Can be eaten hot or cold. Only problem is picking out the cardomoms and cloves but it's well worth the effort. Delicious.

Spaghetti is the cheapest meal, and you can make it healthy. I get the healthy harvest pasta, which is whole wheat at Wal-mart. It is only about a dollar a box. Spaghetti sauce is cheap, about two dollars a can. You can add some cheap hamburger if you like to the sauce, or make meatballs, but that doesn't have to be neccesarry if you're really low on meat and or money. Serve some garlic bread with it, which is cheap or you can make your own with bread, butter, and garlic, or serve a side salad with it, which is cheap too, like a dollar for a bag of garden salad at walmart. You probably have condiments already. So you have a meal for about 5 dollars for the whole family. I've learned that it is best to buy meant in bulk on sale, but buy your other groceries regularly, because if I buy groceries for two weeks or the month, I end up running to the store for various things anyway, or perishables, so it's best to keep stuff other than meat at a weekly budget.

Uncle Ben's is horrible.
Here's two recipes.
Columbian rice: Start with plain white rice. In the pot pour a bit of oil, garlic, and brown the rice in it before adding the water, then just cook as normal.
Spainish rice is mostly the same just add some tomato sause in place of some of the water.
You could also add some saffron to the rice.
Instead of water use chicken broth. On and on and on. Just experiment.

Dirty Rice Recipe courtesy Paula Deen
1 pound bulk pork sausage
1 pound chicken livers, finely chopped
1 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper
4 cups hot cooked rice
1/4 cup chopped fresh parsley leaves
Salt and freshly ground black pepper
Cook the sausage and chicken livers in a large skillet until browned. Add the vegetables and saute until soft. Gently fold in the rice and parsley. Season, to taste, with salt and pepper.

Replace the water in the rice recipe with chicken, vegetable, or beef broth. If you are making rice to go with fish, use veg. broth and a teaspoon of curry powder to flavor it!
Any rice dish likes to have chopped nuts, snipped parsley, or chives stirred in. Play around with pilafs made with pine nuts, beef broth, white currants, and wild rice!
Rice is so inexpensive and quick, if it doesn't come out, toss it and make some more!

1/3 cup chopped onion
1/4 cup butter or margarine
4 cups cooked rice
3 tablespoons teriyaki sauce
2 tablespoons minced fresh parsley
1 teaspoon garlic powder
1/8 teaspoon pepper
1 egg, lightly beaten
In a skillet, saute onion in butter until tender.
Stir in the rice, teriyaki sauce, parsley, garlic powder and pepper. Cook over medium-low heat for 5 minutes, stirring occasionally. Add the egg; cook and stir until egg is completely set, about 3 minutes.
