The quote refers to chocolates, not chocolate. The idea is that in a box of chocolates, each is filled with something different, but you can't tell from the outside what you will find on the inside. Life is the same - you make choices in life based upon what they seem to be on the outside, but you can never really tell what you will find once you get into them.

It is common for a box of chocolates (back in the day when they didnt label what you were getting in writting under each piece) that a person would have to pick up a piece and break it apart to find out what was in it. It was a random choice system and you were just happy to be eating chocolate. In fact years ago, in the 1930's, you were lucky to get to eat an orange around Christmas time. What that statement means is that like a box of chocolates, life is a random game of chances and fate. You are never ever really promised anything other than at some point in time the box of chocolates will be empty (we all will die). So be happy with what you get, enjoy life to its fullest extent and remember to be lucky that you have the chance to experience it.

It used to be that people would buy boxed chocolates, and the chocolate balls would have different flavors and on the inside. They would all look alike, so a person never knew what they were getting until he bit into it. The best example I can think of are chocolates that have cherries or a cherry filling.

Based on that, the quote could then mean that a person never knows what's going to be the consequences of his decisions until after he takes action, or doesn't.

Because in a box of chocolates, most of them appear the same but might be different inside. Hence, Life is like a box of chocolates because you never know what your going to get.

Chocolates in a box look one way on the outside, but the filling is different altogether. In life, you make choices based on how things look at the time from your perspective, but the outcome is often surprising, affected by factors and conditions imperceptible to you.

Basically, it means your life is filled with choices that all resemble one another. You're not sure which to pick, because you don't know what it tastes like. You choose one, and you get what you never saw coming. That's how I see it.
