I have a great cookie recipe, but whenever I try to make them large they just flatten out. I've tried adding more flour and baking soda, but it didn't help too much. I tried using shortening in stead of butter as well. Can I try something else? Do I need to use a different type of flour?

Does anyone have a recipe that makes what I'm looking for?

replace half of the flour with cake flour.. replace white sugar with brown sugar.. replace half of the shortening with butter..

scoop your cookie dough onto the baking sheets first... then freeze them.. lessen baking time.. the center will cook while cooling..

Chill the dough for a few hours before scooping out & baking.

Pre-heat the oven so the dough doesn't have long to melt & spread out.

You can try replacing some of the flour w/ almond meal. (Sold @ Trader Joe's or put some plain, raw almonds in a food processor & whir until it looks like whole wheat flour)

Try cooking at a slightly higher temperature and shorten the time needed. this will crisp it quicker on the outside i think. Brown sugar or mollasses helps to make it chewy.
