I don't think it would be offensive. It actually sounds kind of catchy.

Can we call Atheists Atheiophiles?

Why would anyone care about the label that you use to describe them? They are not going to change what they think, feel, or believe just because you gave them a silly name. I doubt that they care what a cow thinks of them.

So can we just tack the word philes onto anything we dislike then, seems pretty infantile.
