2 options - register as a sole trader with the Revenue Commissioners and file a tax return on your trade every year by October (filed a year in arrears).

Or you could incorporate your business, i.e. set up a company and pay yourself a salary from it.

If it's just one van I'd recommend the first option - incorporation can be quite expensive and you'd still have to pay income tax on any salary you withdraw from the company. With option 1 you are taxed at the normal rates on all your taxable profits.

Look up http://www.revenue.ie - homepage of the Revenue Commissioners. They'll give you advice about registering your business. I believe you'll need to complete a TR1 form to do this - you should find it on the website. (as a regular user of the website I can tell you it's a nightmare trying to find things on it).

Finally, one last word of advice. The Revenue Commissioners specifically targeted chip-van traders over the past couple of years for under-declaring income (this was mostly at major concerts etc). I'm not sure if this is still the case, but as a qualified accountant, let me tell you that honesty is the best policy when filing your returns.

Also the health and safety authority will expect a safety plan, and the health board will need to inspect you van just as they would do to a restaraunt

another shower you have to inform is the health board. they have to inspect it and give you the all clear.
