Here is a recipe for minestroni soup using leftover roast that I put in the crockpot and let cook all day just in time to serve when I get home from work. I top the plates of soup with freshly grated parmesan cheese and serve with a caesar salad and breadsticks or garlic bread: You can also put in any leftover gravy you might have:
put the ingredients in the crockpot and allow to cook 6-8 hrs
1 can kidney beans
1 can chick peas
1 can flat Italian green beans
1 can tomatoes, cut up
1 medium onion, chopped
1 green pepper, chopped
A few noodles
garlic powder to taste
Italian seasonings to taste
Bay leaf, salt and pepper to taste
4-6 c. beef broth I made from beef stock base
About 2 cups or more sliced. left-over beef roast
(any gravy can be
added)

You can make a chili or beef pot pie or sliced beef on a salad with swiss cheese but my favorite is this roast beef hash recipe.
Here's a simple, economical recipe for Roast Beef hash. It doesn't get any easier than this!
Ingredients:
1 cup cubed, cooked roast beef
2 tablespoons margarine
2 medium cubed raw potatoes
2 tablespoons chopped onion
1/4 cup water
1/2 teaspoon beef bouillon granules
1/2 teaspoon salt
1/4 teaspoon pepper
Melt the margarine in a skillet on the stove. Add the remaining ingredients and mix. Cover and cook on low until the potatoes are tender (about 10 minutes). Uncover and cook 5 minutes longer.

My old family favorite. My mother was fixing this when I was a kid in the 50s. I don't know when it actually started. I make it quite often. Use a cast iron skillet. Dice potatoes into bite size cubes, use about 1/2 of a med. onion, sliced. Add water to cover. Salt/pepper to taste. Add any leftover meats, cut into bite size pieces, use the fat too for the flavor. Cover and cook over med/low heat until the potatoes are done. This is great with baked beans with/bacon on top. Large can of Pork-n-beans, some brown sugar, cover with strips of bacon. Oven at 400 degrees. Both dishes take 45min. to an hour to cook. I like to serve my "hash"/stew over a slice of bread, but that's just me. You should have plenty of liquid in the hash. Roast beef sliced thin also make great cold sandwiches. You can also slice some and heat it up in the microwave covered with BBQ sauce. Serve with french fries and a salad. Enjoy, I love leftovers, I don't have to cook so much.

You can make a roast beef spread, do you have a meat grinder or food processor?
Take about a cup and a half of your cooked roast beef grind it or process it but do not liquefy, chop 1/4 onion 1 stalk celery and enough Mayonnaise to hold it altogether, You may not need to add salt and pepper but if so do it to taste. You can eat this as a sandwich or on crackers,
Barbeque beef sandwiches, hot roast beef sandwiches, how about making beef enchiladas, and or Tacos, what about beef hash and Potato, can even make beef vegetable soup or chili, Added to spaghetti sauce.

We love hot beef sandwiches. Take slice of bread, plop on mashed potatoes, put some slices of hot beef on top, then smother with hot gravy.
Or, use it in a casserole:
1/2 c. cut up vooked beef
1/2 c. onion, sliced thin (saute)
1 c. celery soup or mushroom soup
1/3 c. milk
3 c. potatoes, sliced
3/4 c. shredded cheddar cheese
Arrange in casserole dish, 3 cups potatoes mixed with the other ingredients. Sprinkle cheese over the top. Bake uncovered at 350 degrees for 1 1/2 to 2 hours.

Roast Beef sandwiches, for lunch or open-faced hot with brown gravy (they have that in jars at most grocoery stores); Beef Stroganoff; add it to Spaghetti Sauce; Stirfry (put your favorite cuisine here, Asian, Italian, etc.) style: Slice it thin and roll it into a tube shape and stuff it like Manacotti. Then of course there are soups........ Hope this helps!

Beef quesadillas – chop up beef and put on tortilla with cheese, salsa and whatever else you want. Top with another Tortilla and microwave or cook on the stove. Slice like pizza slices.
Chopped roast beef is good on a salad with lots of veggies.
Make a simple soup with beef broth, veggies and chopped roast beef.

mmmmmmmm........homemade vegetable soup
a can or two of crushed tomatoes and some frozen or canned mixed vegetables with the roast, then season how you like, you could do salt, pepper or put herbs that you like (bay is good)
Or you could make hash. Dice up the meat and some potatoes and onions really small, and brown in a skillet using a little oil. Traditionally, hash is eaten with a fried egg on top, but I personally don't care for the egg..

I agree with Cathi about the hash. It is easy and so delicious. Sometimes I make a roast just so I can make the hash. It is best using leftover potatoes, but I have made it with frozen hash browns or fresh potatoes too. Enjoy!
