Savory Lettuce
6 slices bacon 3 quarts shredded lettuce 2 tablespoons vinegar salt, diced onion to taste. Cook the bacon in a heavy skillet until brown and crisp, and remove it from the fat. Add the shredded lettuce to the hot fat and stir until it wilts. Add th e vinegar and bacon broken in small pieces, salt if needed, and onion if desired. Serve at once.

Stir-Fried Garlic Lettuce
INGREDIENTS:
1 head iceberg lettuce
1 1/2 teaspoons light soy sauce
1 1/2 teaspoons sesame oil
1 teaspoon Shao Hsing rice wine or dry sherry
3/4 teaspoon sugar
1/4 teaspoon freshly ground white pepper
3 tablespoons vegetable oil
3 garlic cloves, smashed and peeled
1/4 teaspoon kosher salt
INSTRUCTIONS:
Core the lettuce and cut into quarters. Separate into leaves. Wash and dry the lettuce thoroughly.
Combine the soy sauce, sesame oil, rice wine, sugar and pepper in a small bowl.
Heat a wok or 14-inch skillet over high heat until hot but not smoking. Add the vegetable oil and garlic, and stir-fry 10 seconds. Add the lettuce and stir-fry 1 minute. Add salt and stir-fry another minute, or until lettuce is just limp. Swirl in the sauce and cook 1 minute longer, or until the lettuce is just tender and is still bright green. Serve immediately.
Serves 4 to 6 as part of a multi-course meal

Yes. Lettuce can be boiled. Ever hear of FRICASSEE? I found this recipe for you. It is made with lamb, but you can also use port just as well. The meal is finished off with a creamy egg and lemon sauce called AVGOLEMONO (egg-lemon)
INGREDIENTS:
For the lamb fricassee:
3 1/4 to 3 1/2 pounds of lamb, cut into large chunks
2 large heads of Romaine lettuce, broken into large pieces
1/2 bunch of fresh dill, chopped
2-3 stalks of celery, chopped
10 green onions, chopped
1 cup of olive oil
1/2 cup of water
2 teaspoons of salt
1/2 teaspoon of pepper

For the avgolemono:
3 eggs, separated
juice of 3 lemons
1 tablespoon of cold water
PREPARATION:
Boil the lamb in enough water to cover for 10 minutes. Drain.
In a frying pan, heat the oil over high heat and brown the meat. Add the onions and cook until they soften.
Transfer to a stew pot with 1/2 cup of water, celery, salt, and pepper. Cook, covered, for 30 minutes over medium-high heat. Add dill and lettuce, resume boil, reduce heat to medium, cover, and cook for 1 hour.
When the fricassee has cooked and only a small amount of liquid remains in the pot, turn off heat.
In a small bowl, whisk together the egg whites with 1 tablespoon of cold water until frothy. Whisk in the egg yolks and lemon juice. Add 1-2 ladlesful of liquid from the pot to the egg-lemon mixture and stir gently. Slowly pour the egg-lemon sauce over the meat. With a wooden spoon, stir gently 4 times. Then shake the pot gently side to side to distribute. Allow to sit covered on the stove for 20 minutes before serving.

I had Romain lettuce bunch grilled at my moms the other night. I wasnt sure about it until I tried it and it was great! They sprayed it with olive oil and sprinkle with salt and pepper then grilled!

yes but it is unnecessary, lettuce can be eaten raw. Cooking it just makes it wilt and lose a lot of its water content.

yes, you can and it's awesome. I would write the recipe for fricase with avgolemono but as i see another user has given you the recipe already. it's a bit of work there but totally awesome. my mom is greek and i have the original recipe. if you want the original email me.

I did not know you can cook lettuce. I thought it would get soggy like spinach if you cook it.

i hace saute'd rommaine lettuce, never tryed other kinds of lettuce, i suggest you try a small amount of lettuce and see what happens. if it turns out well, please let us know.
