I am making a tuna steak tonight, and I never had one so I'm unsure of good sides to use, so does anyone have any suggestions?

I have a bunch of potatoes and carrots, so I would prefer recipes using those two ingredients.

If you have rice available that would be great to have with the tuna. But, if you do not either make baked potatoes, or brown the potatoes and carrots in a skillet with butter and serve on the side as is. Or you could make a little pasta and add butter and garlic or parsley to it for flavor and color and serve. It sounds like you are trying to eat healthy, so don't put too much food on the plate. What you have is fine.

I love rice and black beans as a side for fish.

You can do steam carrots with a little honey-butter glaze. Melt 1 Tbsp honey and 2 Tbsp butter mix then coat steamed carrots.

Garlic sliced potatoes is good to. Add 2 crushed garlic cloves to 2 Tbsp Olive oil in a suate pan over med-high heat. Thin slice your potatoes and cook in hot oil until tender-crisp.

I know this sounds odd, but it's really good. It's a bad knockoff of an Asian meal. I simply sautee off my tuna steaks in salt and pepper. In another pan I sautee up 1 bag of cole slaw mix (not the dressing) in a little olive oil, salt, pepper and garlic powder. You only want it to cook about 3 minutes. Then add about 1/4 container of teriyaki sauce. Cook about another 3 minutes. All done. In another pan add about 1/2 a bottle of the teriyaki sauce and let simmer until it reduces in half. Boil up some angel hair until it's about 2/3 of the way done in chicken stock. Toss in a pan with about 2 tbsp. of the reduced teriyaki, about 2 tbsp. soy sauce, a few sprinkles of powdered ginger and 1/4 c. of the pasta water. Let this cook on high for about 10 minutes. Finish with a little sesame oil off the heat. I almost forgot use the reduced teriyaki on top of the tuna.

For the Warm Potato Salad:
2 tablespoons olive oil
1 cup Smithfield ham, chopped
1/4 cup onions, julienne
2 tablespoons chopped garlic
2 pounds potatoes, peeled and cut into1-inch cubes and blanched until tender
3 tablespoons Creole mustard
1 tablespoon chopped parsley
1 tablespoon chopped chives
Salt
Pepper

For the warm potato salad: In a large saute pan, add the olive oil and heat. Add the ham and onions and cook until the onions have softened. Add the garlic and saute for 1 minute. Add the potatoes and toss until heated through. Add the mustard and herbs, and season with salt and pepper.

Stuffed Carrot Canoes:
12 medium carrots
1/4 cup mayonnaise
1/4 cup plain bread crumbs
2 teaspoons horseradish
4 teaspoons grated onion
2 teaspoons butter, divided
Salt and pepper

In a large pot, bring water to a rolling boil. Boil the carrots until they are slightly tender. Remove them from the water and cut a thin slice out of each carrot lengthwise. Scoop out the contents, leaving a 1-inch shell.
Puree the carrot pieces with mayonnaise, horseradish, grated onion and salt and pepper. Spoon the puree back into the hollow of the carrot.

In a small bowl, mix bread crumbs and 1 teaspoon of butter together until the mixture is crumbly. Sprinkle the bread crumbs over the carrots. Drizzle 1 teaspoon of butter over the bread crumbs.

Carrots with Mustard-Brown Sugar Glaze

5 pounds carrots, peeled, trimmed, and sliced diagonal, 1-inch thick
1/4 pound butter
1/2 cup brown sugar
1/3 cup Dijon mustard
1 ounce honey
1 teaspoon chopped fresh thyme
Salt and freshly ground black pepper

Blanch the carrots in boiling, salted water. Drain and shock in ice water. Drain and set aside. In a large skillet, melt the butter and sugar together. Stir in mustard, honey, and carrots. Bring to a simmer and toss to combine. Add chopped thyme, salt, and pepper and serve.

How can you even put those two words in the same sentence.....Tuna + Steak = Tuna Steak......it just cant be good!! Ha, no but really.....I would do either a baked potato or mashed and have fresh carrots and ranch dip......

tuna steak is yummy...I usually have cheddar broccoli rice(Lipton in the bag) cut up your potatoe's drizzle olive oil and put seasoning you like on it.(I always use Mrs dash Italian) and bake for 30 or so minutes. It taste like fried potatoes,but,healthier.

It's not potatoes and carrots, but sauteed green beans with garlic and soy sauce go really well with most fish.
