you need to dig a small hole , put hot charcoals under and over the meat. you need to cover the meat with a lot of aluminum foil, 2 or 3 times and inside the foil you need to have the meat covered with a baking paper about 4 sheets of paper. you can also put peppers inside. this recipe is totally awesome and can be done even better with lamp. i guess you burned it because you put too much charcoals and left it too long. turkey is roasting very fast so i guess it needs half the time you need for beaf. if it's a whole turkey and big, maybe about an hour ? I have done this only with lamp and it takes a while.

dig a hole,, line with rocks,, build a huge fire,, cover coals with wet burlap,, stuff and spice the bird ,,and wrap in wet bedsheets cover all that with a canvas and secure the edge to prevent any dirt getting under and more dirt to hold everything down and the heat in.
NOW,, you have no idea or controll of the condition of cooking,, speed,, HA

Yes, but it has to be a really deep hole so that the turkey gets cooked by the heat coming from Earth's molten core.
