Fiery Chicken Strips Recipe
2 tablespoons butter or margarine (melted)
2 teaspoons liquid hot pepper sauce
1 teaspoon cider vinegar
2/3 cup yellow cornmeal
1/4-1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1 lb chicken tenders (chicken cut into strips)
Low-fat ranch dressing or bleu cheese salad dressing, for dipping
Preheat oven to 400 degrees.
In a mixing bowl, mix butter, hot pepper, and vinegar and set aside.
In a shallow dish, mix cornmeal, cayenne, and salt together.
Dip chicken strips in melted butter mixture and coat with liquid ingredients.
Roll chicken in cornmeal mixture after dipping in butter and coat evenly.
Place chicken strips on a baking sheet and bake for 9-11 minutes at 400 degrees, flip over and bake an additional 5 minutes.
When chicken is done juices will run clear.
Serve and dip in dresssing if desired

Chicken Broccoli Pasta Recipe
1 pound boneless, skinless chicken breast, cut into pieces
12 ounces pasta, cooked according to package directions and drained
2 cups frozen broccoli cuts
10 3/4 ounce can cream of chicken soup
3/4 cheddar cheese, grated
Sauté chicken pieces in an oiled nonstick frying pan until they are no longer pink in the center. Place noodles in slow cooker; top with chicken, broccoli, and soup. Mix well. Sprinkle cheese on top and cover. Cook on low for 2-3 hours

Hi you may want to try this.... in a deep skillet take 1 1/2 boneless breast cut into strips seasoned with salt and pepper, and dry powdered mustard. (season to taste) place about 2 table spoons of olive oil (virgin) just when the oil is hot enough place the chicken strips and fry until golden. Take the chicken out place aside. Take 1/2 red onion, cut into thin slices, 1/2 red pepper cut into thin strips, 1/3 cup of cilantro, and 2 garlic cloves,, mash the garlic with the flat side of the knife. In the same skillet with the remaining juices of the chicken and olive oil, add another 2 table spoons of olive oil and bring to a top heat, add the onion, pepper, garlic, and cilantro. stirring until cooked and sort of golden, add the chicken and stir together. After the chicken and other veggies are cooked , take 3-4 queen stuffed olives and slice them., and one half of a tomato slice and dice it. You can have this with plain white rice, or pasta, bow pasta is the best, Serve the pasta and chicken then dress it up with the olives slices and diced tomato's on top, a sprig of fresh cilantro does not hurt. Enjoy... This is a Puerto rican dish, usually served with yellow rice.

i take a boneless, skinless chicken breast, put thawed chicken in a baking dish.
mix together peanut butter, mustard, a bit of brown sugar or syrup and whatever other seasonings sound good (thyme, rosemary, parsley, etc - even a bit of grape jelly or strawberry jam - maybe catsup or bbq sauce - it just depends on my mood)
put the peanut butter mixture on top of the chicken breasts, you can do this either with a knife or by putting the mix and the chicken into a ziplock baggie and shaking it up - it just depends on how thick/thin you made your mix.
put 1-2 tablespoons of water in the bottom of the baking dish.
bake @ 375 until the chicken is cooked all the way through.
i like to serve it with penne pasta with just a little bit of alfredo sauce on the pasta.
It sounds kinda odd, but the peanut butter really does add good flavor and locks the moisture in the chicken.
another good way i like to fix chicken it to cut the boneless skinless breasts into 1 inch cubes (or smaller) and set aside
mix together 1 egg, add a teaspoon or a little more corn meal, stir, then add about 1 cup (or more) of crushed crunchy snacks (saltines, club crackers, cheese-its, honey grahams, fritos, other chips or best yet a mix).
put the chicken into a large bowl or ziplock baggie, add the egg/crackers mix and coat the chicken.
bake until done.
i often serve it w/instant rice to which i have added a scrambled egg, some corn, red sweet pepper, broccoli florets and a couple slices of cheese.

Acapulco Chicken
1 cup long grain rice, uncooked
1/2 pound fresh mushrooms, sliced
6 chicken breast halves, skinless and boneless
1/2 cup chopped celery
1 medium onion, chopped
1 tablespoon parsley leaves
1-3/4 cups hot water
2 teaspoons chicken base
1 (5.3-ounce) can evaporated milk
1 (10-ounce can) tomatoes and chilies ( I USE "ROTEL")
2 cups Cheddar or Monterey Jack cheese
Salsa for garnish
Preheat oven to 375°F (190°C).
Layer in a greased 13 x 9 x 2-inch baking dish the rice, mushrooms, chicken, celery, onion and parsley.
Combine the water, chicken base, milk, tomatoes and chilies. Pour over the chicken.
Bake, uncovered for 45 minutes. Remove from oven and top with cheese and bake for another 5 minutes, or until cheese has melted.
Serve with salsa as a garnish.

Chili's Grill & Bar Southwest Chicken and Pasta
2 Boneless skinless chicken breast halves, cut into thin strips
2 teaspoons Cajun seasoning
2 tablespoons butter or margarine
1 to 2 cups heavy cream
1/4 teaspoon dried basil
1/4 teaspoon lemon pepper seasoning
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
4 ounces linguine or fettuccini cooked and drained
Grated Parmesan cheese, optional
Place chicken an Cajun seasoning in a bowl or resealable plastic bag; toss or shake to coat. In a large skillet over medium heat, saute chicken in butter until almost tender, about 5 - 7 minutes. Reduce heat. Add cream and seasoning; heat through. Add pasta and toss; heat through. Sprinkle Parmesan cheese if desired. Adjust the Cajun seasoning if you like it spicier.

This ones good over rice
Chicken Croquettes (Croquetas de Pollo)
Ingredients
3 boneless chicken breast
1/4 cups all-purpose flour
3/4 cups milk
3 tbsp cracker meal
1 tbsp dry white wine
2 eggs well beaten
salt and pepper to taste
Finely ground cracker meal, salted to taste
Oil for deep frying
Directions
1. Boil chicken until tender, then drain water and allow chicken to
cool.
2. Ground chicken and set chicken aside in large bowl.
3. Place the flour in a large sauté pan and slowly add milk, stirring
constantly over medium heat.
4. Add butter and continue to stir until reaches paste-like
consistency. Remove from heat and stir in 3 tbsp of cracker meal, salt,
pepper and garlic.
5. Sprinkle chicken with wine and add flour mixture. Mix well and
refrigerate.
6. After mixture is thoroughly chilled, make finger sized croquettes.
7. Rubbing small amount of vegetable oil in the palm of your hand helps
keep mixture from sticking.
8. Dip each croquette first in egg, then the cracker meal, then the egg
and then a final coating in cracker meal.
9. Deep-fry several minutes until golden brown, but do not overcook.

This recipe is way too good for how easy it is.
4 boneless skinless chicken breasts
1 fresh lime
4-6 scallions cut in small pieces
Breadcrumbs.
Dredge chicken in flour. Shake off excess and sauté in a pan with 1 part butter to 3 parts oil until lightly browned.
Place in a baking dish.
Grate lime zest liberally over chicken.
Squeeze lime juice over chicken.
Sprinkle with small amount of breadcrumbs.
Sprinkle with cut scallions.
Bake at 325 degrees for 45 minutes until cooked through.
Serve with rice, pasta, potato, whatever.
Enjoy!

These are two of my favorite ones:
Mama's Chicken and Rice
1/4 cup canola oil
1 chicken, cut up or pre-cut pieces or just chicken breast
1 large onion
1 teaspoon salt
1/4 cup black pepper
2 cups raw rice
4 cups water
Brown chicken in hot oil. Cook until almost done. Add onions, salt and black pepper. Cook at least 5 minutes. Add rice and water. Cook until almost all liquid is absorbed. Cover and turn off fire. Let set for 10 minutes or longer. Stir and enjoy.
Hawaiian Chicken
1-3# cut up ready to cook fryer or just chicken breast
1/4 cup melted butter
1-9 oz can pineapple slices (or chunks) I uses more
1/4 cup brown sugar
2 Tab. cornstarch
2 Tab chili sauce
1 tsp soy sauce
1 tsp salt
1/4 cup vinegar
1/2 tsp Worcestershire sauce
1/3 cup cat sup
In a shallow roasting pan, roll chicken in melted butter until well coated. Arrange pieces, skin side up, in a single layer in pan. Reserve 2 slices of pineapple for garnishing & dice the remaining. Mix the pinapple juice with the remaining ingredients. Add drained pinapple pieces. Spoon half over chicken. Cover and bake 350 degrees for 1/2 hour. Uncover & bake for 30-45 min. or longer till chicken is tender. Baste chicken occ. with sauce as it cooks. When done twist the two slices of pinapple (cut into) and place on chicken and serve.

PASTA WITH CHICKEN AND BROCCOLI
2 garlic cloves, minced
1/4 c. olive oil
1/2 lb. chicken breast strips
1/4 c. broccoli florets, chopped
3/4 c. sun-dried tomatoes
1 tsp. fresh basil, chopped fine
Pinch red pepper
1/4 c. semi-dry white wine
3/4 c. low salt chicken broth
1 tbsp. low salt butter
1/2 lb. bow tie pasta
Pepper to taste
Grated cheese
Cut up broccoli, sun-dried tomatoes, basil and chicken separately and set aside.
In large skillet, cook together garlic, oil and chicken; set aside.
Saute broccoli in butter, add chicken mixture; stir. Add all ingredients remaining, except pasta and cheese.
Make pasta as directed on box. Let chicken and broccoli simmer for 20 minutes to blend flavors. Add pasta to dish and top with grated cheese.

A classic, Home made Teriyake Chicken:
Fried sliced white onnion wid sugar and hen it gets seethrough add soy sauce and squares of chicken breast. Let cook the chicken. At the end you can add cornstarch dissolved in water (1 or 1 1/2 teaspoon of cornstarch in enough water to make it liquid).
Perfect side dish: white rice

Toss some soy sauce, white wine, onion, and apple on it and pop it in the oven. I serve it with rice.
Marinade it in soy and garlic. Stir fry it with lots of veggies, such as snow peas, onion, bell pepper, squash, celery, carrot, maybe bamboo shoots or sliced water chessnuts, toss some bean sprouts on at the last minute, and serve on rice or pasta.
You can put just about any spices on it and it's nummy.
Brown it with onion, garlic, and bell pepper. Add Tomato sauce or canned tomatos and tomato paste; add oregano, bay, sage, thyme, and whatever and toss it on pasta.
