I went to Ireland in June and had the best tasting Cole Slaw ever while I was there!!! I usually don't like it at all, but it was very different---it had an orange color to it. A friend mentioned it might have carrots in it, but I don't know. I've looked all over the internet to find the recipe with no luck. Anyone know a recipe??? Help! :)

It was probably something like this. My mom used to make it for us.

3 cups shredded carrots
1/2 cup raisins
1/3 to 1/2 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon brown sugar
Dash salt

Optional: 1 cup chopped apple, or well drained crushed pineapple, or 1/2 cup chopped celery

You can shred the carrots in a food processor, or by hand using a cheese shredder. It usually takes about 5 or 6 carrots to make 3 cups, but measure it as you go along, to be sure. A little more carrot is preferable to a little less. While the carrots are shredding, soak the raisins in a cereal bowl of warm tap water. This plumps them up so they taste better in the salad. After soaking for a few minutes drain them and squeeze them dry with your hand. In a medium sized mixing bowl, combine the shredded carrots, raisins, mayonnaise, lemon juice, sugar, and salt. Add one or more of the optional ingredients if you feel so inspired. Mix it all up and chill it until serving time. This is good to serve up with hot foods in the winter time when you need a cold salad to balance out the menu. If this recipe makes too much, you may cut it in half or thirds.

If it was the dressing that looked orange, it might have had some ketchup in it -- making it more like a thousand island type dressing. I have carrots in my cole slaw all the time but they don't turn the whole thing orange.

My mother shreds carrots and sometimes puts raisins in it. She mixes carrots with raisins, mayonnaise, sweet pickle juice, salt and pepper. I don't know if that's considered cole slaw though.

went to North Carolina and the rest., we visited had an orange look to it , the had carrots and tomatoes in it and it was the worst slaw i ever tasted never went back to that rest. , again

Cole Slaw
Ingredients:
1 head cabbage, cut up
3 medium apples, cut up
1 medium carrot, shredded
1 bag of shredded cheese
1 lemon rind, shredded
***COLESLAW DRESSING***
1/4 cup vinegar
1/2 cup sugar
1 cup mayonnaise
1 lemon, juiced

Mix cabbage, apple, carrot, cheese and lemon rind.

Mix ingredients for dressing and pour over coleslaw mixture; mix well. Refrigerate
