Illegal -- doubtful unless you decide to chunk the glass along with the ice, then they may have a case.
Immature -- definitely yes! No excuse needed -- don't like their dancing or something? Tough.... get over it or go someplace else. Chances are they don't like everything about you as well... especially if you're acting like a spoiled brat and chunking ice at them. If you're old enough to be at a club dancing, surely you're old enough to understand that you need to grow the hell_ up and act your age.

I would say it is definitely immature if this is unprovoked. Does their dancing simply annoy you, so you're chunking ice cubes at them? Dancing is a form of self expression. Not everyone likes YOUR dancing, i'm sure of it.
As far as being illegal, probably not. If they complain to someone you might be asked to leave the club, which would be embarassing.

It is completely immature and unnecessary. If you hurt the person with the ice, you are opening yourself up to legal troubles.
