Pulled BBQ pork: put a seasoned Boston butt roast in the crock topped with a bottle of barbecue sauce on low. Leave the lid on and in 6-8 hours take off the lid and stir, this will effectively shred the tender, delicious meat, just remove any bones.
You can do the same thing with a beef chuck roast, or even boneless, skinless chicken (include some thighs).
A delicious beef can be done in a similar fashion without using BBQ sauce if you wanted a beef dip sandwich. Put your beef roast in the pot with some onions, onion soup mix, and stock or broth. Cook like you would a pulled pork BBQ and serve on buns, juice from the crock as au jus, or with some cheese (shredded or even cheese whiz heated in another crock) to add for cheesesteaks.
Sloppy joes do well in a crockpot.

I have this great dip I make and when i take it somewhere, everyone loves it. You can use it with tostitos chips or Ritz crackers, either way the dip makes it taste the best. It's easy and so fast. (2) 8 ounces of cream cheese (1) Jar of mild or hot salsa (2) cups of shredded cheese (1) tomato cut up into small pieces (small enough to put in your mouth. This will serve at least 12 ppl...if you want to make allot just double up the amount of each ingredient. you won't be sorry! You mix the cream cheese and the salsa together in a mixing bowl. Once you mix it all together you can put it in either a square dip pan or a bowl. You spread out the shredded cheese & tomato on top of the dip to make it look pretty. It is so good I make it for every party and for friends. Because the cream cheese is already cold you don't have to chill or warm anything. It's done in about 10 minutes.

I'm having a housewarming party and was going to do one crockpot with Italian beef and another with sloppy joes. After reading the pulled pork recipes I think I'll go with that instead of the sloppy joes. Another appetizer type thing that is good is meatballs with grape jelly & chili sauce. How about beef stew in the crock that is always a crowd pleaser. I also make honey glazed chicken in the crock cuz it comes out so tender.
Get chicken pieces, take a fork and tenderize it, then put it in
the crock and pour a jar of honey over it. Let it cook, you get the honey flavoring throughout the chicken and gravy at the same time.

Maybe something like a Philly steak sandwich? Keep steak ingredients in crockpot in one and buns in another.
Or instead of a sandwich maybe a pot of chili or red beans and rice with french bread on the side.

You can never go wrong with sloppy joes, easy and pretty cheap as well, serve with small sandwich rolls, sliced onions, pickles and a variety of chips and dips, maybe even carrot and celery sticks, iced tea or lemonaide.
You could also do bbq brisket, teryaki chicken, or even meatball subs.
