I am going out of town for two days and I wanted to cook something easy and good tonight that my boyfriend can just heat up tommorrow & Wednesday night.. Any Ideas???

one dish meal:
macaroni (any shape) chop meat, and sauce (home-made or jar) and any spices you want. Brown the chop meat, add the sauce let it heat. Mix it with the macaroni and its good for up to 4 days after.

Any type of left over meat is always good to heat up in the microwave, especially chicken, ham, pork chops.

Whip up pasta and red sauce as normal. Then dump it all into a greased baking dish and refrigerate. When it's cook, dump a lot of mozzarella and Parmesan on it, and a drained can of sliced black olives. Cover and freeze it.

My mom used to do this kind of thing when my dad was away for the week in the Senate.

you could make a large casserole. thats a really easy thing to re-heat and eat. plus, a good casserole is really delicious, even if it's been refrigerated for a day or two.
