Drizzle with olive oil, salt, pepper, garlic powder and rosemary and bake at 350 for an hour. Crunchy skin, moist meat. Delicious.

cut the chicken into smaller pieces, sepertae the leg from the rest of the chicken.... Pan fry til done. Add salt/pepper if desired. Throw in a package of mixed veggies( I use broccoli/carrot/ cauliflower) and a can of broccoli cheese soup and about 1/4 cup of milk. Cover and let simmer for about 10-15 min, stir ocassionally. Top with shredded cheese.
simple easy recipe I used to make all the time when I was in school.
You can also substitute the Broccoli cheese soup for cream of chicken, or cream of mushroom.... any cream based soup works great. Pick your fave veggie to throw in. Serve with wild grain rice or white rice, or even some egg noodles.

Boil chicken with skin off for 30mins in seasoned water (salt alone is fine, or throw in some garlic cloves, etc), then baste with BBQ sauce and cook on hot grill or in oven approx 20-30 more mins. Boiling cooks chicken through and allows you to add flavor to the meat while keeping it very moist. Grilling or baking afterwards, tightens and hardens the outer layer of meat, sealing moisture in and gives it a pretty color.
Cut pieces up and fry in deep fryer approx 20-30mins with flour, salt, oregano, garlic, pepper seasoning. Dip in milk first, then roll in flour/cornmeal, then sprinkle with seasonings. Start with high heat (400F) and fry for about 8 mins, then lower heat to 325-350F and cook remainder of time until juices are clear. This keeps chicken moist inside by sealing outer layer quickly. Also avoids that greasy chicken feeling. To use less grease, boil chicken beforehand and throw in deep fryer for just 8mins at high temp to crisp outer layer.

Barbecue sauce. Put in heavy duty tin foil. Pour your choice of barbecue sauce on chicken, coat well and bake until done.
Serve with corn on the cob, steamed broccoli, rolls and iced tea. End meal with chocolate pudding or a slice of pie for dessert. Walla...a great meal and now I am hungry. Guess what I am having for dinner tonight? LOL

Leg quarters are my favorites!!! I think the best way to cook them is to grill them over charcoal and put BBQ sauce on them. (this is how my Grandaddy used to do every Sunday!)Not only is it YUMMY, but it brings back great memories!! Thanks!! And enjoy however you cook them. :)
