I have a flight at 7am. I am on business at Newburgh that weekend.

It won't be bad at all. I go to the city all the time on Sunday mornings around 9 or 10 am....and it seems empty in comparison to the weekdays. So at 5am you shouldn't have any problems on the Thruway or in the area near JFK.

Plan on leaving Newburgh by 4:00 AM at the latest .
Routing should be Newburgh > Port Chester NY >JFK
Traffic should pretty light although since NYC bars close at 4:00 AM and since it''s Saturday night there wil be more traffic than you think

Traffic wouldn't be bad at all around that time.

Traffic in NYC begins to assemble between 3/4pm-8pm! :)

you should fly through at that time of day your home bound trip may be congested.
