Sprinkle them with 'Fruit Fresh' which is really just powdered vitamin C (ascorbic acid?) (in baking aisle at grocery store). Or, when I'm making pie, I'll put the peeled apples in a bowl of water into which I've squeezed half a lemon.Neither of these will keep them from browning for as long as you want, though. If I peel and slice apples, and sprinkle them with lemon or fruit fresh in the morning for my kids lunches, and they eat at 11:30, they say they're too brown to eat . And I agree, so I don't do that anymore.

The browning of apples is due to a process called oxydation.
The delicate cells of the apple's flesh oxydate as soon as the oxygen from the air gets in contact with them.
This process can be delayed by placing the peeled or cut apples in a bowl with cold water and the juice of one lemmon (or two if they are small).
However shortly after you take them out of the water bath they will begin their oxydation process. This is just usefull if you need to cut apples for a cake or so or want to have them ready until serving But it wont work for lunches. Unfortunately you will have to either change your fruit or take the whole apples.
Some bakeries or restaurants spread lemmon juice over them and put them in airtight containers but they do not last a whole night either. I never used this technique so I am not sure how long they will be good for, but considering that lemmon juice will start penetrating and breaking some of the apples flesh structure after a reasonable time, my guess is that this is not going to be a solution for you either.

To keep any sliced fruit fresher, bakeries and restaurants actually put a little bit of lemon juice over them and seal them ina good airtight container. At home you can try this (remember not to leave them in too long as that can make them spoil as well.), or you can also make sure that when you cut it, you keep the apple in a baggie or container that actually keeps the fruit "together"... cut the apple, but don't pull apart the slices, this will help a little as well.
If you dont like how bitter a lemon is, you can also try lime or orange juice... but it doesn't work quite as well.

Any acidic juice will work, pineapple actually keeps the apples sweet, whereas lemon juice works but can be a bit tart. There are also commercial products that you can buy such as fruit fresh, but the natural way using juice is of course healthier.
