They already have them, check at Pepboys or JC Whitney for 180° view racing mirrors. They are about 2' long and broken into segments.

I used to have a 1967 Sunbeam Alpine.
It had a ball-joint on the back of the rear-view mirror for adjustment, but the ball joint was not central on the mirror in the vertical plane. This meant that by turning the mirror through 180° (keeping the reflective surface towards you, and rotating about an axis parallel to the car's length) you could adjust the height of the mirror.

Could be done in segments, or a swivel approach, or a radius design, but without the glass required, it would be senseless. Maybe in an AMC Pacer, it would benefit the driver. I would suggest a fisheye section built into the side mirrors would be of more help, for blind spot view.
