Because the Hebrew copied the Egyptian and pretended that theirs is older but somehow (oops) they don't have the originals (same goes for the Roman bible). In other words there are no originals because it was all made later. The Epic of Gilgamesh we have though, and it's written in stone and predates the Genesis writings by 1500 years (ie. it contains the original great flood story and obviously Genesis copied from it).

The Egyptian culture of ancient times recorded everything. The ancient Hebrew culture did not write their stories. It was a sacred ORAL tradition and it was thought to be wrong to write it down.

The first time anybody actually attempted to write all of it down was in King David's time.

Egypt was thousands of years old by that time. Plenty of time for MUCH more to have been written.

The answer to that is simple. Israel was occupied by the Romans for several centuries. While, generally, the (pre-Christian) Romans would allow conquered people to maintain their religions, the Jews had a habit of rebelling. Eventually, the Romans got fed up. They destroyed the temples, and either killed the Jews or ran them "out of town." It's called the diaspora, and was brewing before/during the time of Christ. In fact, there are theories that Jesus, himself, was less prophet and more revolutionary.

Because the Jews were frequently conquered, their religious temples burned, etc. Even the Ark of the Covenant was lost. The Egyptians, however, were not conquered so often.
