This is possible as I went to a BBQ to discovered everything cooked to perfection! It was so delicious and I didn't have to peel anything off.

The best way to barbeque is to precook Ribs and Chicken, add the sause and grill to bake in the flavor and add to the visual effect.

A lot of people think you slather bbq sauce over the food and then cook it. Unfortunately, chicken (particularly chicken with bones, which I think you're referring to) takes a while to cook, while the bbq sauce, which has sugar in it, is quick to burn.

Although you can do boneless chicken with sauce on it immediately, just taking care to turn it and not let it burn, chicken with bones takes longer.

Most places that do chicken (or ribs, which suffer a similar problem) well, actually pre-cook the food, sometimes with a rub, sometimes not, and not necessarily on the grill, but when the food is supposed to be prepared for serving, coat it with sauce, and give it a few minutes on the grill on each side to tighten up the sauce and give it some flavor. People assume it was all cooked on the grill, but that's not the case. You could, but you'd need to protect it via a pan or aluminum foil while you did the bulk of the cooking, and only finishing it with the sauce.

1. Cook it low and slow. High temperatures result in cooking the outside before the inside is done.

2. You use a rub to season the chicken before you put it on the grill, then add your barbecue sauce after the chicken is done. Barbecue sauce has a lot of sugar in it, and it'll progress from sweet to carmelized to carbon in no time flat.

There is a difference b/t bbqing and grilling. Grilling is done over direct heat. BBQ is done over indirect heat.

Pile your coals on one side of the pit (or only light one side of your gas pit), let them get hot, then cook over the other section of the pit, the one w/o direct heat. Takes awhile, 20-30 min, but worth it.
