*Cake:
1 stick plus 2 teaspoons unsalted butter
1 1/2 cups packed light brown sugar
2 large eggs
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour cream
1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped apples
Crumble Topping:
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened
Brown Sugar Glaze:
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water
Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.*

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

1 cup packed brown sugar -- divided
2 teaspoons ground cinnamon -- divided
3/4 cup (1-1/2 sticks) butter -- melted
1 cup milk
2 large eggs
1/2 cup chopped pecans
1. Coat a 9" x 13" baking dish with nonstick cooking spray, then flour. In a large bowl, combine the 2 cups flour, the baking powder, baking soda, salt, sugar, 1/2 cup brown sugar, 1 teaspoon cinnamon, the butter, milk, and eggs. Beat until well combined; pour into the baking dish, then cover and chill for at least 8 hours, or overnight.
2. Preheat the oven to 350 degrees F.
3. In a small bowl, combine the remaining 1/2 cup brown sugar and 1 teaspoon cinnamon with the pecans. Sprinkle over the chilled batter and bake for 30 to 35 minutes, or until a wooden toothpick inserted in the center comes out clean. Cut, and serve warm.

Best Coffee Cake
1 cup granulated sugar
1 cup brown sugar, packed
1 cup butter or margarine
3 cups all-purpose flour
1/2 cup chopped nuts
1 1/2 teaspoons ground cinnamon
1 cup coffee black
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
Preheat oven to 350*F (175*C). Grease a 13 x 9 x 2-inch baking pan; set aside.
Combine the first 6 ingredients until crumbly. Reserve 1 cup of crumb mixture and set aside for topping.
To the remaining crumb mixture add the rest of the ingredients from the coffee to the baking soda and stir by hand to combine. Mixture will be slightly lumpy.
Pour into prepared baking pan. Top with the reserved 1 cup crumb mixture and bake for 25 or 30 minutes or until tested done when wooden pick inserted in center comes out clean. Serve warm.

Here's one I got from a neighbor about 25 years ago.
Prize Coffee Cake
Batter:
3/4 cup sugar
1/4 cup butter - softened
1 egg
1/2 cup milk
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
Streusal: Mix the following together:
1 cup brown sugar (best is 1/2 dark and 1/2 light)
1/4 cup flour
1 Tbs. and 1 tsp. cinnamon
1/4 cup butter - melted
Preheat oven to 375 F Grease and flour a 9" square pan.
Cream sugar, butter and egg thoroughly; stir in milk.
Sift dry ingredients and stir into above.
Spread 1/2 batter in bottom of pan. Sprinkle with 1/2 of streusal topping. Spread remaining batter and sprinkle streusal. Bake 25 to 35 minutes at 375 F.
This is delicious and simple. ENJOY!

Easy Coffee Cake
2 (8 ounce) cans refrigerated crescent dinner rolls
1 cup sugar
2 (8 ounce) packages cream cheese, softened
1 teaspoon vanilla
1 egg, separated
1/2 cup whole pecans, chopped
Preheat Oven to 350 degrees.
Spray bottom of 13x9 baking dish with a non-stick cooking spray. (Original recipe does not have this step, but i included it to make the removal of the cake easier).
Spread one can of the Crescent Rolls in the bottom of the 13x9 Pan. Pinch all the edges together to make one sheet.
Cream together 3/4 cup of sugar, cream cheese, Vanilla and egg yolk till creamy and smooth.
Spread mixture over the Crescent rolls.
Top with the second package of Crescent Rolls. Again, pinch together all the edges to make it one sheet.
Beat the egg white till frothy and spread on top.
Sprinkle the top with the remaining 1/4 cup of sugar and Pecans evenly.
Bake for 30 to 35 minutes till nice and golden brown.

Coffeecake muffins 1/2 cup softened butter 1/2 cup sugar 2 eggs 1 cup sour cream 1 tsp. vanilla 2 cups flour 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt Marble mixture: 1/2 cup brown sugar 1/2 cup finely chopped walnuts 1 tsp. ground cinnamon (save 2 T. for top of muffins) Cream sugar and butter. Add eggs, sour cream and vanilla. Mix in flour, baking powder, soda and salt. Beat well. With a knife, cut the marble mixture into the batter. Do not mix. Pour batter into 11 or 12 muffin cups that are well greased. Sprinkle sugar mixture on top. Bake at 375 degrees for 22 minutes.
