Are you training somewhere? They should be able to arrange that stuff for you. Most schools are in close contact with promoters. If you aren't training, I definitely wouldn't recommend fighting. Many promoters, or at least the good ones, require you to provide proof of your training before they let you fight. They want to ensure there will be good (and even) fights, and there is no way to know this if one fighter isn't trained. Look into joining an MMA school (or better yet...jujitsu paired with a striking art, like muay thai). MMA isn't the same as a street fight, and there is a lot more to it than you might think. Good luck.

Check out some of the promoters that have put on kick boxing, Muay Tai and MMA type events. They are sometimes looking for armature fighters for preliminary bouts and/or can also maybe refer you to a good coach. I would be careful from the standpoint that I do know both coaches and promoters that will consider the money end first only and their ability to fill their fight card at the expense of some untrained, inexperienced fighter that is just starting out.

Also check out the yellow pages and visit some of the schools and watch some of the classes and talk to some of the students, fighters, coaches, and instructors. I would make it a point to visit them more than once and as you become a little more familiar with them you may make some new friends that will help steer you in the right direction and help you to make a good decision on where to go and who to train with and whose cards to fight on.

Look I've been to new york and even if there isn't one in your area there are lots of gyms in the city you just have to be serious about wanting to do this and hop on the subway, I know Renzo Gracie has a gym there where he coaches the Pitbulls and Matt Serra has also opened up his own academy in Long Island.

There is bound to be a MMA Training center near you. They might have fights there or tell you where to go to fight... just keep asking around.

Talk to your martial arts instructor. He/She may have some information for you. You may have to travel out of state too depending on laws and such.

If anything else you can contact the UFC or read up on the web page for training centers in or near your area.
