Supper for tomorrow night at the ranch house:
**************BEEF STEAK AND POTATO SCALLOP
1 lb. beef round steak
3 tbsp. shortening
3 sm. onions
1 1/4 tsp. salt
1/4 tsp. pepper
Dash thyme
Dash garlic salt
2 c. water
3 med. potatoes (pared & thinly sliced)
Heat oven to 350 degrees. Cut meat into 1 inch cubes; coat with flour. Melt shortening in skillet; brown meat, add onion; cook and stir until onion is tender. Pour into ungreased 2 quart casserole; sprinkle with 3 tablespoons flour, 1 1/4 teaspoon salt, the pepper, thyme and garlic salt. Pour water over mixture. Cover and bake 45-60 minutes or until meat is tender.
Increase oven temperature to 450 degrees. Arrange potatoes on meat; sprinkle with salt and paprika. Bake about 30 minutes longer or until potatoes are tender. Serves 4-6.
*************Dijon Green Beans
1-1/2 pounds fresh green beans, trimmed or 3 can of green beans
2 tablespoons red wine vinegar
2 tablespoons olive oil
2 tablespoons Dijon mustard
½ teaspoon salt
¼ teaspoon pepper
1 cup of grape tomatoes, halved
½ small red/ purple onion, sliced
2 tablespoons grated parmesan cheese
Place fresh beans in a large saucepan; cover with water. Bring to a boil. Cook, uncover, for 8-10 minutes or until crisp-tender. Or open canned green beans.
Meanwhile, for dressing, whisk the vinegar, oil, mustard, salt and pepper in a small bow. Drain beans; place in a large bowl. Add tomatoes and onion. Drizzle with dressing and toss a coat. Sprinkle with Parmesan cheese.
*******CORNBREAD SALAD
1 (16 ounce) package corn bread mix
10 slices bacon
1 (1 ounce) package ranch dressing mix
1 1/2 cups sour cream
1 1/2 cups mayonnaise
2 (15 ounce) cans pinto beans, drained
3 tomatoes, chopped
1 cup chopped green bell pepper
1 cup chopped green onion
2 cups shredded Cheddar cheese
2 (11 ounce) cans whole kernel corn, drained
DIRECTIONS
Prepare corn bread according to package directions. Cool, crumble, and set aside.
Place bacon in a large deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
Whisk together the dressing mix, sour cream, and mayonnaise.
Crumble half the corn bread in the bottom of a large serving dish. Top with half the beans. Layer the beans with half of the tomatoes, green bell pepper, and green onions. Sprinkle with half the cheese, corn, bacon, and the salad dressing mixture. Repeat the layers. Cover, and chill at least 2 hours before serving.
********BANANA AND STRAWBERRY PUDDING
1 box of Jell-O French Vanilla Instant pudding
1 box of Jell-O Banana Cream Instant pudding
milk
1 large container of Whipped cream
3-4 ripe bananas
1 small carton of strawberries
1 bag of the cheapest vanilla wafers (they stay crunchy longer)
The amount of layers depends on the dish it is prepared in. I use an 11x9 in. glass casserole dish.
In a bowl combine both boxes of pudding mix and prepare according to the package directions omitting 1 cup of milk.
Fold half of the whipped cream into the pudding mixture. Now make a layer of vanilla wafers on the bottom of your casserole dish (none of the wafers should be on top of one another), then slice bananas over the wafers until you get an even cover but you should still be able to see the first layer.
Now slice strawberries over the bananas. The next layer will be the pudding. Start over with the vanilla wafers, continue layer up to the pudding.
After you've applied a layer of pudding, line the sides of the pan with wafers. Take the rest of the whipped cream and spread it on top.
Crush the remaining wafers and crumbs, and then sprinkle them on top of whipped cream.
Optional: Garnish top with strawberries.

Crock Pot Chops That Will Make You Eat Til You Pop!
4 pork chops, each about 1/2 inch thick
2 medium onions, chopped
2 celery ribs, chopped
1 large green pepper, sliced
1 (14 1/2 ounce) can stewed tomatoes
1/2 cup ketchup
2 tablespoons cider vinegar
2 tablespoons brown sugar
2 tablespoons worcestershire sauce
1 tablespoon lemon juice
1 beef bouillon cube
2 tablespoons cornstarch
2 tablespoons water
Salt and pepper pork chops if desired.
Add all ingredients except water and cornstarch to the crock pot.
Cook on low for 5 1/2 hours.
Mix cornstarch and water together and stir into crock pot.
Cook 30 minutes more.
Serve over rice.

as much water as u want thick
any ccanned veggie u want
box elbow macarroni
I dont give amount of ingredents because you add as much as will feed the amount of people you have
brown meat
add diced carrot cook till soft
add onion cook till soft
add garlic & spices
can tomato let cook 5-10 min /add water
let simmer as long as you need but a least 30 min up to a couple hours
add any veggie- green beans and corn are my fav
30min before u serve add elbow stirring ocasionaly
I serve with cornbread
freezes great

Last night I made something really different and it came out great. I took a sirloin steak and pounded it really thin so that it could be rolled. I made a marindate of 1/4C salsa, 1/4C olive oil, 4 tbsp lemon juice, & 2 pinches of cayanne pepper. Marinade while preparing the following. I then made a mixture of 1/2 cup corn, 6 cubes of pepperjack cheese, 1/4C. onions, 1 diced tomato & 4 Tbsp bread crumbs and sauted that up. I then placed the mixture in the sirloin steak and rolled it up. I added a few tooth picks (soaked in water so they won't burn) to hold it together. I then grilled it to a medium rare and served it up. I served this with homeade spanish rice. It was gooood. I like to be inventive and I think I will make this again.

Supper is just another term for dinner, people in the south and who are older are usually the ones that use that term. it is the main meal of the day, such as on sundays, supper would be around lunch time, i dont know exactly why but i have worked at retirement centers for quite sometime and that is what they all call it.hope that helps

When I get bored with "dinner food", I do waffles or pancakes with sausage for dinner. It's a fun change.
Quesadillas are really good and easy too. I just buy flour tortillas, salsa (your choice - I use medium heat pineapple for these!), refried beans, black beans, canned corn, cheese, jalepenos and a rotisserie chicken.
Shred the chicken, mix the corn and black beans and then layer what you like on the tortilla. Top with another tortilla. Toss in a frying pan sprayed with Pam. Brown on both sides. So good! And everyone can pick and choose what they want.
Make your own pizza with pre-baked crust (like Boboli) are great too. Add some sauce, cheese and toppings - done!
I also like to do a big pot of soup with sandwiches. Or a french onion with the toast and cheese on top!
Tonight I am making chicken stew with dumplings. Good stuff!

Same boat man - I am thinkin about going up to Seneca Niagara Casino they have a great buffet there (No not like Tony Buffet). I am talkin about shrimp, lobster, carved prime rib, chicken fried steak, chinese, mexican (4 star buffet and they have a make your own tacos - like high school. Full dessert bar with ice cream machine and the waitstaff takes away your plates and refreshes your drinks while your up at the food.
Find a casino buffet. They're the best.

We're having beef stroganoff. I make it like this:
1 boneless beef sirloin steak, 3/4 inch thick (1 lb.)
1 cup Sour Cream
2 Tbsp. flour
1/2 cup water
2 tsp. instant beef bouillon
1/4 tsp. pepper
2 Tbsp. butter or margarine
1-1/2 cups sliced fresh mushrooms
1/2 cup chopped onion
1 clove garlic, minced
4 cups hot cooked noodles
Place steak in freezer 30 minutes to firm. Cut across grain into 2x1/2-inch strips.
Mix sour cream and flour in small bowl. Stir in water, bouillon and pepper; set aside.
Melt butter in large skillet on medium-high heat. Add 1/2 of the steak; cook and stir until steak is cooked through. Remove steak from skillet. Add remaining steak and vegetables to skillet; cook and stir until steak is cooked through and onion is tender.
Return all steak to skillet. Reduce heat to medium. Add sour cream mixture; cook until bubbly, stirring constantly. Cook an additional minute. Spoon over hot noodles.
You can use leftover cooked steak for this, too.

Make a chicken pot pie, easy middle of week thing, but feels like comfort food. Buy premade pie shells With or with out tin. Grab a can of cream of chicken soup or chciken gravy, A can of potatoes(in veggy isle) A can or bag of peas and carrots, canned is cheaper, but i prefer frozen peas. In bone chcken meat cheaper, but depends on your time. I use the whole leg or thighs and boil in some liquid, (keeping the juice to make my own gravy or if leftover chicken i use for hot chicken sandwiches later on. Use any kind you feel or even the precooked or boneless skinless chciken. I have used leftover mashed potatoe before. So you take the chcicken veggies, potatoes, gravy mix put into one shel and take second and cover the top put in vent holes bake 350 till golden brown about half hour. Make ahead put in freezer . I serve with cranberry sauce and packaged stuffing I put in casserole dosh prepared with saved liquid and bake with pie(on the side) Brings that all day cooking in the time you are washing clothes helping w homework. Enjoy.
How about a taco bake, yeah you can buy the mix, but I have been making for years beofre they came out. My family and freinds loved tacos, but I always ran out of beef or shells, never anything else and expensive, and hard to set up everything to serve everyone. I put it all together one day, and wella, plenty of leftovers, set down all at once and only one dish for cleaning.
Brown meat of choice. We use ground beef. I chop an onion in my meet, add taco seasoning pack, and water as directed. Line a casserole pan or cake pan with soft taco shells. Layer cheese, hamburger and shells, I spread nacho cheese on my shells, middle layer i add jalepenp peppers to mix. It is your meal, prepare and do it the way you want. I bake at 350 for half hour. I then chop up tomatoe and lettuce for top and I love cheese so I offer cheese also. I make a drizzle of sourcream and salsa drizzle over the cooked taco, and choped veggies. Trust me I have never not had enough of this dish, everyone that has eaten it, bites off more than they can chew.(shredded cheese like taco or pizza)
Dessert 2 cans fruit cocktail
1 box jiffy cake mix dry
1 stick butter
bake 350 till bubbly and golden.
pour fruit into tin, crumble the dry mix over all, drizzle with the butter.

balsamic glaze chicken -- just pan fry chicken breasts and for the glaze simmer 1/2 cup balsamic vinegar and 1/4 cup brown sugar packed tight until its about 1/2 the amount you started with.
serve it with pasta tossed in olive oil and a tomato salad on the side.

Pork chops first dipped in buttermilk and then roll in italian bread crumbs brown on both sides then put in the oven on a cookie sheet and wire rack to finish baking.
