Well, Ms. Bettie, I think it has a great deal to do with humanity. I notice, though, that a number of people seem to have fit God into it although the song was about Paul's ex-wife (whose hair was graying at the time). I do love Jon M's answer and his thoughtfulness but It seems to me that many people busy thanking God should be thanking the people who have sacrificed for and loved them unconditionally. I know this may be God to some but if he forces others to be good to us then he automatically takes our "free will" from us. It's nice to know that people intercede and try to make things better out of a love for humanity rather than because they are pre-programmed to. I like to think that human beings can be the greatest support to one another by helping and being moral without having to learn their 'moral sense' from a novel more than 2,000 years old. This is NOT meant for those Christians amongst us who understand that it is good to thank God as well as others, just the ones who automatically jump to "It's because of God!" without even thinking the question through, as though they are all in some contest to see who blesses and thanks God the most.

Y'know, reading it again I can understand more why people glean "God' from it. Still, I hope all of them have someone in their physical lives who would do all of this for them. The version on Simon's "Live Rhymin" (with the Jessy Dixon Singers) always moves the heck out of me but since I cannot find it, I leave you with this - and thank you for such a wonderful question (It's not "Bridge" - the only version I can find is their Central Park version and it's not a great one):

I think the song is about conquering your fears and building a bridge or bridges over old grudges which represent the water.
