White, chilled. Red, room temp and opened to breathe before serving. The exception would be a Sangria, or sparkling red which is served cold or on ice.

I think slightly chilled is actually OK. Room temp in my part of SoCal is 85-90. Most wines, when stored in cellar, are kept at around 55 degrees. Cold takes away the flavor, but hot makes it seem more alcohol-ish. However, you should do whatever you like best. I like my whites super-cold sometimes and other times room temp.
Just opening the bottle to let it breathe does almost nothing. Think about it. The surface contact with the wine is less than the size of a nickel. You need to pour some out, decant it, or just let your glass breathe a bit first.

55 degree F is proper for most red wines. It really depends of the type of red though. Not all reds are the same. Room temp is too warm.

Room temperature, if your room happens to be 50-65 °F, otherwise chill it until it drops. Room temperature refers to cellar temperature, not everyday living room temperature. A red wine at 70 °F is just too warm.

Definately room temperature and i also open the bottle before drink to allow to breath! white wine should be chilled and also rose...although ya'd think that was more like red eh!!
