Are the airlines required to pay anything to the families (like a set sum of money or is there anything in the info you sign that nullifies or safeguards the airline from this)

Depends! Most of the time monies are paid indeed. This
is a question for a competent attorney, however even an
attorney can not say for sure what compensation (if any)
would be paid out until all the facts/data is collected with regard to the crash.

In most cases the airline will offer compensation to the families, not just to compensate the families, but also to obtain a release from further damages the money grubbing attorneys will be seeking on behalf of the families in lawsuits that are sure to follow. I'm sure that insurance is a major operating cost for any airline.

Families can always sue the airlines for negligence to try to get money. Some of your credit cards provide travel insurance and I know that my job pays more to my family if I get killed while travelling on company business.

No. Fly at your own risk. Just like if a train crashed or a boat sunk, the families do not get paid.
