If they deposit it, the bank might or might not honor it - they aren't supposed to, but it could slip through. If it was just a few hours ago, I'd go back to the store - ir longer, call them and see if they noticed it and held the check. Otherwise, call your bank in the morning and ask them what you need to do. If they noticed it, they most likely just bounced it back to the store, and they'll be calling you.
I once did this, the person who got the check cashed it at the bank branch and they didn't notice it. The main bank office just called me and asked me to come down and sign it. But this is in a very small town, and I don't think this is typical bank procedure most places.

Checks are not manually processed. It's entirely possible that the check went right thru with no problem.
It is also possible that the unsigned check hasn't made it back to the store yet. Sometimes it takes 2 months for a returned check to work its way back.
Has the checked cleared you bank statement yet?

No a CHEQUE can not be cashed unsigned. If one has gone through the cashier will also have missed it.
Next advise do not bank at that bank they could be giving your money to anyone

if the shop already did their banking, call your bank with the check number to authorise.
If you go to the store and they insist on writing a new check, call you bank to cancel the check while at the store
