Sweet and Sour Red Cabbage
with bacon, brown sugar, and wine vinegar.
1 large head of red cabbage -- shredded
4 to 6 slices bacon, fried and crumbled -- reserve drippings
1 tablespoon brown sugar
1 teaspoon salt
1/4 cup red wine or cider vinegar
salt and pepper -- to taste
Add brown sugar, salt and vinegar to the cooled bacon drippings in the skillet; stir until sugar has dissolved.
Add shredded cabbage; mix well and heat through. Add salt and pepper to taste; garnish with crumbled bacon.
Serves 4.
Sweet & Sour Red Cabbage (German/Austrian Style)
1/4 cup (1/2 stick) butter
1 2-pound red cabbage, thinly sliced (about 12 cups)
6 Tbsp sugar
2/3 cup balsamic vinegar
Melt the butter in a large pot over medium heat. Add cabbage and sauté until slightly wilted, about 5 minutes. Add sugar, toss to coat evenly. Add vinegar. Reduce heat to medium-low; simmer until cabbage is tender, stirring often, about 30 minutes. Season to taste with salt and pepper.
Sweet and sour red cabbage is pretty basic, you could search the net and find lots of variations and level of difficulty. You could also make cole slaws, beef and cabbage hash....there are lots of dishes you can use cabbage in....or better yet, create one of your own. Cooking is fun, enjoy it and be creative.

Do you like sauerkraut? The color is a little funky with red cabbage but tasty. Also Mom used to make relish both sweet and dill with surplus cabbage. Great on hot dogs and burgers.
I like cabbage just about any way it's fixed. Slaw or fried with a little bacon. Or German fried cabbage with green apples.

Sweet-Sour Cabbage
1/4 cup oleo or butter
6 cups chopped cabbage
1/2 medium chopped onion
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 cups water
1/2 cup white vinegar
1/2 cup sugar
Bring oleo, cabbage, onion, salt, pepper, water to a boil. Cook for 15 minutes. Add vinegar and sugar, simmer til tender.

SWEET AND SOUR RED CABBAGE
1 head red cabbage, shredded
2 sour apples, cut in sm. wedges
4 slices bacon, diced and fried
4 tbsp. brown sugar
2 tbsp. vinegar plus same amount sweet pickle juice
Salt and pepper
Fry bacon. Leave fat and bacon in skillet. Add rest of ingredients. Cover tightly and get it hot, then turn down heat and let it cook slowly until tender. May be fixed ahead of time and reheated on Christmas Eve.

Sweet & Sour Sauce
1 tablespoon cornstarch
1/2 cup brown sugar
1/2 cup water
1/4 cup vinegar
1/4 cup ketchup
Combine all ingredients.
(For double recipe only use 1/3 cup vinegar).
Cook for 3-5 minutes, until thick.

As long as you have a garden full, have you tried kimchee? Check out the usual cooking sites (all recipes,cooks recipes, etc...) for the quick versions. The authentic Japanese or Korean versions take forever. It's tasty stuff.
