Feedback is an important concept (problem?) for electronic circuit designers. Perhaps you could 'design' a circuit(s) that demonstrates how adjusting one part of a circuit (variable resistor?) causes another part to reflect feedback (as observed on a common voltmeter?). The thermostat in a house is a feedback device that shuts off the furnace when the target house temperature is reached.

You might consider showing how transistor circuits are similar to tube circuits. Using a simple triode amplifier, bread boarded to show the various components, and next to it, a FET circuit and how the FET works in a similar way as the tube circuit does. Having a DMM, a signal generator, and oscilloscope on hand to show voltage values and signal levels would be a plus. One point here is that by changing just a few parameters, such as applied voltages, the FET operates in a very similar way as the tube does. It would be a great way to show how modern electronic circuits are based on tube type circuits. If you choose this route, be ready to explain gain, and impedance values. It would also show how much less energy is required for solid state equipment versus tube equipment.

Make a solid state tesla coil. There are a good number of websites to get ideas and help. Keep the power down to keep it safe. Resonance is a very important electrical phenomena to understand for radio electronics.

A basic 12V 240V inverter is always a nice easy project. Very Simple but good showoff tool.

I chose this as my project as to build it and design it only took a couple of weeks to give me a passable inverter that worked.

once I had this under my belt I was then able to go on and improve on it, increase power, regulation perfecting the sign wave. etc etc..

Very Neat little project when running the oscilloscope I used to show the sign wave of a car battery on demonstration day.

Modulate the output of a laser diode (the type used in innovations for reflects) with a microphone, element the beam for the period of a room to a image diode, demodulate the sign, improve and feed to a speaker. you're starting to be validated transmission of sound via a mild beam. If an IR diode is used the beam can't additionally be considered.

Servo-loop type projects are always good. A temperature measurement and control project, or maybe something to do with positioning something. Projects are always better when they involve something that you can see or feel.
