I love Mocha cake, but I can't find a good recipe. I like the kind that doesn't have a lot of chocolate, but just coffee flavor. Anyone have a good recipe or know of a site where I can find one?

i've got 3 recipes:

1) Mocha Cake

You need:

Cake:


2 1/2 cups of plain flour
1 teaspoon bi-carbonate of soda
2 cups caster sugar
1 teaspoon ground cinnamon
250g unsalted butter
1 cup strong coffee
1/2 cup buttermilk
1/2 cup cocoa powder
2 eggs, lightly beaten
1 teaspoon vanilla essence

Icing:


1/2 cup cocoa powder
125g. unsalted butter
5 tablespoons buttermilk
1 teaspoon vanilla essence
500g. icing sugar

Method:

Cake method:


1. Pre-heat over to 180 deg.C. Line a 23cm x 30cm cake tin with baking paper.

2. Combine flour, bi-carbonate of soda, sugar and cinnamon in a large mixing bowl. Place butter, coffee, buttermilk and cocoa powder in a saucepan and stir over low heat until butter has melted. Remove from heat and pour over the flour mixture. Stir to combine, adding eggs and vanilla.

3. Pour mixture into prepared tin and bake for about 30 minutes or until the cake is cooked when tested with a wooden skewer. Remove from oven but leave in the tin to cool. When the cake is completely cold, spread with icing.


Icing method:


1. Combine cocoa powder, butter and buttermilk in a saucepan and stir until butter has melted. Remove from heat and pour into a mixing bowl.

2. Add vanilla and icing sugar and beat until smooth and mixture has thickened.


2) Mystery Mocha Cake Recipe

Ingredients:
3/4 cup sugar
1 cup flour
2 teaspoons baking powder
1/8 teaspoon salt
1 ounce unsweetened chocolate
2 tablespoons butter
1/2 cup milk
1 teaspoon vanilla
1/2 cup brown sugar
1/2 cup sugar
4 tablespoons cocoa
1 cup cold, double-strength coffee

Directions:

Mix and sift first 4 ingredients. Melt chocolate together in double boiler; add to first mixture, blend well. Combine milk and vanilla; add and mix well. Pour into greased pan. Combine brown sugar, 1/2 cup sugar and cocoa in small bowl. Sprinkle over batter. Pour coffee over top. Bake in 350 degree oven for 40 minutes. Serve warm or cold with whipped cream.

3) Moist Mocha Cake

For the cake:


Cooking spray
3/4 cup whole-wheat pastry flour
1/2 cup all-purpose flour
1/2 cup Dutch processed cocoa
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 tablespoons butter, melted
2 tablespoons canola oil
2 eggs
2 egg whites
1 1/2 cups lowfat yogurt
2 teaspoons vanilla extract
3/4 cup granulated sugar
1 tablespoon espresso powder, dissolved in 1 tablespoon of hot water
2 ounces good-quality dark chocolate

For the frosting:


1 (8-ounce) bar Neufchatel cheese (reduced fat cream cheese), softened
1/3 cup confectioners' sugar
1 teaspoon espresso powder dissolved in 1 teaspoon hot water
1 teaspoon coffee liqueur or vanilla
1 small square chocolate

Arrange rack in center of oven and preheat oven to 350 degrees F. Spray a 9 by 13-inch cake pan with cooking spray and set aside.

Whisk together flours, cocoa, salt, baking soda and baking powder in a medium bowl, then sift ingredients through a fine mesh strainer.

In a large mixing bowl, whisk together melted butter and oil. Add eggs and egg whites and whisk to incorporate. Fold in yogurt, vanilla, sugar and dissolved espresso powder. Melt the chocolate in the microwave for 90 seconds or over a double boiler. Fold chocolate into batter.

Gradually add sifted dry ingredients and stir until just incorporated; do not overbeat. Pour batter into prepared pan. Bake for 25 to 30 minutes, until cake has risen nicely and a toothpick inserted into the center comes out clean. Cool completely.

While cake is cooling, make the frosting:
Combine all ingredients in a bowl and beat with an electric hand mixer until soft and creamy. Spread frosting evenly over cake and cut into squares. Finely grate one small square of chocolate. Sprinkle the chocolate shavings over the cake.
