My husband is in the army. He will be comming home from a 15 month tour of duty in a couple of months, but anyway..recently we lost 2 soldiers in his company to a suicide bomber. We are holding a memorial ceremony for them here on base and the wives from the company have all been asked to bring a main dish for the reception. It needs to be large enough to feed about 40 people. the wives from other companies will be making side dishes. (we're stationed in Germany, so picking something up isnt an option)
I decided that I'm going to make a chicken noodle casserole, but in order to make enough for 40 people I would need to make about 5 of these. I have a 3 month old baby, and there is no way that I can handle him and 5 casseroles too. I was thinking about preparing the casserole in 2 large aluminum turkey roasting pans instead of 5 13x9 inch baking dishes since that would be easier to carry..but I'm not sure if roasting pans will hold all of the food even though they're deeper.

Those pans hold a lot more than you t hink....if you are talking about the size they use at buffets. Why not make a chicken caesar salad? Lots of fresh veggies and chicken? It might be easier than casseroles and just as good.

i think you only need to make one large turkey roasting pan of your chicken noodle casserole. remember, people will only take one spoonfull of your casserole each as there will be so much food supplied by others.
people don't normally come back for second helpings of mains - except for dessert.
you may want to think about changing your recipe to chicken & rice casserole. you can make both a day ahead & rice keeps better then noodles.
a suggestion:
the day before:
cook 2 chickens in broth - let cool - then debone & shred meat.
make a creamy white sauce using broth - combine with chicken - refrigerate
cook 4 cups white rice - spread out on tea towel - let cool.
refrigerate
on day - put rice in bottom of roasting pan
lay chicken and white sauce on top
garnish top with shredded cheese
reheat in oven 350F or 180C for 30 minutes

first off - thank your hubby for me for being who he is and doing the job that he does; to you for standing by him and offer my condolences to the families of the soldiers who were killed

the aluminum turkey roasting pans sound like a great idea but it would be a good idea to double each one; whenever i use them for anything including the turkey i double it so it is stronger; maybe you could ask for a bit of help transporting your dishes so you are not overwhelmed with the baby and the food - keep up the support

They will work perfectly, but I would double up on the pans as they are flimsy and may not hold up to the weight of the food. Many thanks to your husband and all the soldiers who bravely serve our country. I will say a prayer for the fallen soldiers.

yes i think they will hold all the casserole.
they are also "heavy dutier" so they won't be likely to fold when you are carrying them.
you should be fine. you might want to get cardboard to put on the bottom and btwn them, during transport.
