Making Bread the traditional way ( by Hand) is one of the easiest things to do.
It might sound a little complicated at first, but it's actually very easy. It only takes a few minutes of work, the rest of the time the dough just sits there while it rises, no work involved.
There are tons of breads that you cannot make in a machine. And the textures and crusts of the different breads are unachievable in a bread Machine.
Italian, French, Rye breads are all easy to make, I won't even talk about the crunchy rolls etc.
Look for Yeast bread recipes on line and try your hand at one of the simpler ones, such as Italian Bread. It comes out very tasty. Once you master this, you also have the recipe for making your own Pizza Dough. Pizza started out when the village baker used up leftover dough from the day's baking and put some Olive Oil and garlic on it. The flat shape came about because by that time there wasn't enough heat left in the oven to cook a thick loaf.

Of course! In fact, I got rid of my bread machine bacause I didn't think it came out as well as made the old fashioned way...mixing and kneading by hand. It takes more work, but if I make the dough just before lunch, we easily have fresh warm bread or rolls with dinner. YUM!

Sure, you can do it the old fashioned way, by hand.

In my opinion, handmade bread tastes better and has a better texture than the bread machine bread.

if you're interested in bread, pick up the book
"Bread Alone"
http://www.amazon.com/Bread-Alone-Fresh-Loaves-Hands/dp/0688092616

bread is an artform, once it comes from your own two hands, you'll understand and appreciate it better.

but be wary.. the first few...hell maybe even hundreds of loaves might be pretty scary...
;)
it's all in fun, if you mess it up...oohh well try again :) it's just food.
