Isnt it that the faster you travel at the speed of light time slows down so if god is light his time is very slow compared to earths time right which would make 1 day as a 1000 years?
Is this one of the things god means literally and he is not just trying to say that earth time has no relevance to him?
And did people 2000 years ago know about light and time being relative to each other in that manner meaning god had to have said that himself?

and i also was watching a show about creation of earth and they said after all the creatures and species and plants on earth were created and i quote "The earth literally rested" that was his words the bible says after god created earth on the 7th day god rested..but thats for a different question

That interpretation is not going to work. The Bible verse in question says:
2 Peter 3:8 But do not let this one fact escape your notice, beloved, that with the Lord one day is like a thousand years, and a thousand years like one day.
Time can seem either faster or slower. The Bible teaches of time and eternity. In eternity, the measuring rod of time is irrelevant. That's the point of the verse.

Taking a bit from the bible and trying to make sense of it is a noble cause, but one that will never come up with a concrete answer. No one knows God, and therefore, no one can ever verify or refute the claims we make about him and his grand designs.
But taking a scientific tack now... Time doesn't slow down, it slows down RELATIVE to the person traveling at light (or near-light speeds). You could probably stretch the scripture to fit this definition, but the trouble with man interpreting something someone else wrote is that you rarely end up with what the author meant to begin with. The bible is nothing different... but a cosmic game of telephone. How many times has it been retranslated? How much can you loose going from one language to another? I'm not trying to disprove the bible here... don't get me wrong... Faith is just that though. The belief in something without any physical evidence to substantiate the claim. We humans crave proof, and that is what keeps us constantly checking religious beliefs against what we know. Good question.... it makes you think.. And that is all that we really can do.. THINK.

God is not light. He created light, He radiates it, He dwells in it, but God is primarily Spirit. Those who thought God was light but did not know the real God, worshiped the sun.
Your question is threefold. You mention the speed of light (see link) which I believe was instantaneous at the point of creation (the Big Bang if you prefer) and is now slowing.
As for time, we live in time, God does not. We are three dimensional. God isn't (He was once when He appeared as Jesus Christ); when we die time stops. The only people on earth who live outside of time are young children (remember when you were young, you shone like the sun??) , Rishis, contemplatives, some very elderly folks and stoners.
You are a thinker. Keep it up - the world needs you.

If you believe one day is one thousand years, and God created plants on the third day and then the moon, sun and stars on the fourth, WHAT THE HELL WERE THE PLANTS LIVING OFF OF WITH NO SUNLIGHT?

hmm i think it should be billion years since 6 billion is the age of the earth, so we are living now in the final day, the 7th day the last billion year's period has started. note that also according to science the age of earth is about 6 billion years.
