Just curious as no ever seemed to be able to give me an answer besides "I don't know".

Catsup was the old way to say Ketchup. Over time as the english language developed people changed the ca to ke with the great vowel change. In certain areas people continue to say catsup because of their roots, but most people say ketchup.

I think it's due to marketing over time. I have a lot of old recipes that say catsup, but I type ketchup now when rewriting them - so people will know what ingredient is being used. Most companies now label their product ketchup, but one local store brand's label still reads catsup. Could be Heinz or Hunt's first labelled theirs ketchup and it caught on.

catsup is just french for ketchup

many people took it from how they heard it. It comes from the Amoy word ke-tsiap
