"pulled beef" is when you take a roast or some other similar cut of beef and slowly cook it until it is extremely tender. Then, rather than carving it or cutting it into chunks, one takes one or two forks or other utensils and seperates the meat into the tiny strands that make up a piece of meat. The act of separating the meat into those tiny strands is referred to as pulling it apart - making the beef (or pork or chicken... whatever kind of meat is being done" pulled.
Some people will also call this shredding, though, in my experience, shredded meat was typically cut into fine pieces with a knife, whereas pulled meats are not cut. They fall apart into the natural strands.

I make pulled pork and pulled beef all the time. Don't worry, it's not some mystery part of the cow..it's just beef roast.

It's roast beef, it's just cooked so tender that you don't cut it, you just pull it apart, usually with two forks.
We have a lot of places that do pulled pork around here, too. They both make really good BBQ sandwiches.

It's called "pulled" because you use a couple forks to "pull" it apart after it's been slow cooked...like shredding it apart. It normally has bbq sauce mixed with it, then reheated then served. Added into a brown gravy would be good also, like you had it. Which part of the country fixed it with brown gravy?
Pulled pork in bbq sauce is really good too. You're unlikely to get sick from it.

By history, it is a meat (usually pork) that has been barbecued (not grilled). After being cooked it is pulled apart by hand. I know that reading your question has made we very hungry! Glad you enjoyed.

A well seasoned roast that was slow cooked and when it was done, two forks pulled the tender meat apart and it was lovingly placed on your plate for you to enjoy. You won't get sick from it but you will probably need a nap.
