Pickles exists because people needed a way to make food last thru the winter and until the next harvest. Brines were invented and a multitude of things were tried. One of the winners that lasted well beyond refrigeration is the pickle, or brine soaked cucumber.

My guess is that long ago, someone had too many cucumbers and discovered that they could use salt and vinegar to preserve them for winter use. I'm glad they exist because I enjoy them so many ways. I put a platter of dill slices out when I have chili; I slice them on sandwiches; I dice them in pasta salads, potato salad, and ham salad. And if I have a stomach ache, a dill pickle often cures that real fast. And how about those tiny little sweet pickles? They're sooo good!

It started as a way to extend the shelf life of pickles.
Now it just taste good.
